My hubby doesn't like kidney beans. I'm sure i read somewhere on this forum that you can use a tin of baked beans instead in the chilli...does anyone remember the post and does it taste nice?0

You probably can. Haven't tried it myself so can't tell you whether it tastes nice.... You could just leave the kidney beans out.
Chilli is one of those individual things. You put in what you like and leave out what you don't. I put all manner of veg in mine. Not strictly 'chilli', but what the heck...:dance:There's a real buzz about the neighbourhood :dance:0 -
I make chilli all the time and really love it. This is a delicious recipe and you can adjust the spices according to how hot you like it. I don't bother with the kidney beans myself - I just have the chilli on its own. Yum!
Serves 3-4
olive oil
2 cloves garlic crushed
1 onion, chopped
500g minced beef
1 beef stock cube mixed into 12oz water (sorry to mix measurements!)
1 tin chopped tomatoes
1 140g tin tomato puree
2 tsp oregano
2 tsp cumin
2 tsp cayenne pepper
2 tsp chilli powder (hot or mild depending how you like it)
1 bay leaf
½ teaspoon salt
Place the garlic in the olive oil whilst it is cold (this stops it burning) and add the onion. Cook this, stirring until the onion is translucent and soft. Add in the beef and break it up, mixing until it is nicely browned.
Add the rest of the ingredients, stir well and then cover and simmer for 1 hour. If you like kidney beans then drain a tin and add these at the end, simmering for another 15 minutes.
I decided to make my own chilli after trying Morrisons own brand, which was really nice but left a tang in my mouth afterwards. Its just as easy to make from scratch if you ask me and there is no way it tastes the same as packet or tinned chilli!!!
I freeze what I don't eat into individual portions and have my own homemade ready meals for when I don't have time to cook. I just defrost overnight and then place in the oven on Gas 4 for an hour, covered in foil and it tastes just the same as when it is freshly made.0 -

I think you can get them in tins but I use the dried ones that you soak overnight, you can get them in most supermarkets
although really you could use any kind of beans/peas you like (but baked beans would be a last resort for me! I'd leave it bean-less)
btw, you don't have to give them a rapid 10-minute boil, it's only dried Red Kidney & Soya Beans that need it to eliminate toxins
and I second some of the previous posts, always use some oregano & cummin0 -
My Mum used to make a demon chilli using baked beans instead of red kidney, unfortunately she's long passed so can't ask her the recipe, but I would think you'd probably reduce the other tomato based ingredients in a recipe to compensate for the tomato sauce in the baked beans.Norn Iron Club Member No. 252 :beer:0

I always use diced shin beef in my chilli, rather than mince. I do it in the pressure cooker and it only takes 20 mins.
Use quantities accoding to size of your family and how much you want to make/freeze.
1 x Onion, chopped & sweated.
Couple of cloves Garlic ditto.
spoonful of toasted Cumin seed.
Sear the meat.
Add stock, and either a tin of chopped tomatoes or some passata.
1x teaspoon hot chilli powder - obviously, adjust according to your family's taste.
1 x tablespoon cocoa powder.
Bring up to pressure and cook for 20 mins. Take off heat, release pressure. Remove lid, put back on heat, thicken with cornflour, add 1 x can of kidney beans and warm them through.
Serve with some soured cream or natural yoghourt to take away the heat if it's too spicy, and some soft Tortillas, rice or a baked spud. Yum.
Btw, you can add some chopped veggies (peppers, mushrooms etc.) and extra beans if you want to make more without increasing the cost by too much.Official DFW Nerd No 096 - Proud to have dealt with my debt!0 -

Make a basic bolognese sauce
mince, onions, chopped toms, tom puree,
cook this all down then add in kidney beans and some chilli powder(use mild if don't like too spicy)
cook together approx 15 mins and serve over boiled rice
gets hotter if you leave it a day
