    OK I tried this last night, using the recipe on this thread, but used the basic white loaf setting (no 1), it came out lovely but even on the light crust setting it came out very hard (almost burnt)

    Looking at the manual, I may try it on sandwich bread or sweet bread setting next time because they have the shortest bake times at the end
  • My paddle's stuck! I've soaked it as per instructions, but it doesn't seem to want to shift.....any suggestions gratefully appreciated.

    Joey, i make all my loafs on the fastbake setting (no7) the crust is always lovely and soft.

    Tibbies mum, i can only suggest squirt loads of washing up liquid on it and give it good pull, if you can get your nails under it maybe you can work it loose. Sorry it hasn't happened to me, its usually in the bread :rotfl:

    Tibbie's mum, this happens to me everytime, i usually just let it soak and give it a good yank, maybe try and wedge something under the paddle to lever it up... and always remember to oil the spindle before you put the paddle on.

    Thanks for your reply, I must admit I forgot the oiling this time, I'm still fighting with it. It will be brute force and ignorance that shifts it, we're lost without it, we haven't had a pizza in days!

    Also make sure you soak it in cold water to try and make the metal shrink a bit :)

    I've given up with bread maker. Got fed up of bricks, not rising properly, or rising too much. Used to wake up to smell of baking bread, but disappointed as the loaf had cooked too early, and was soggy.
    Now I.m using the Artisan Bread five Minutes a Day book. Absolutely brilliant, no bad results, Always got usable dough ready for anything. Just mix, do not knead, leave to rise for couple of hoursish, put in fridge until next day. Take offf a lump, make into pizza bread loaves, buns etc. Fold over 3 or 4 times, no need to knead, leave to rise then into the oven.
    I have made bread every day since I got the book. Also made brioche using same method but with enriched dough.
    The bread maker is going. I wish I had known this method 40 years ago, I would never have bought bread and definately not bought a breadmaker. I have got some rustic type bread dough in the fridge at the moment. Its has whole meal flour, some rye flour, and oat bran in it. I made one lot up yesterday, and the bread is really tasty, and springy.

    One other thing, if you make a lot of bread, from Tesco, packets of yeast work out a colosal amount more than say the Alison small tin. I was shopping with grandaughter, and showing her how to compare prices on the labels - we both got a shock on the price difference

    Oh no, i think my breadmaker is dying :( Yesterday i baked a fruit cake in it and it kept beeping every 20 mins or so. Thought it was a one off, but today i put in some pizza dough, after 2 mins it beeped and there was no display, but it was still turning the paddle. Turned it off then on and it's working again but has beeped a couple of times. My BM is 2 1/2 years old and been used loads, anyone else had this?
