I have had all kinds of knives, including Global and Wustoff/Henckells, but my present favourite is a knife which I bought from TKMax a couple of years ago, and hadn't really used it until last month. It is a Sekiryu (Japanese) medium cook's knife, with a molybdenum stainless steel blade. It has a nice amount of flexibility, is thinner than my Sabatier, and the blade is really sharp - and stays sharp, with just a few swipes of the steel to tune it up. It doesn't have the traditional Japanese hardwood handle, but a classical, black wooden one, and the balance is amazing.0

Yep - I love my big fat chef's knife
I used to be quite happy with my £3 knife set from Ikea until my newly minted other half took a look in my knife drawer, turned his nose up and went and bought himself a proper chopper.
It wasn't expensive and its a not flashy (he paid about £7 for it in tkmaxx or somewhere but its so nice, natural (and sharp!) I wonder how I ever got along without one!0 -
I personally like using Big Chef Knife for most of the stuff in the kitchen.
On top of that I use Bread Knife for (obviously) cutting bread.

I've got a Viners set atm... they hold an edge for about three slices through a banana.0

a henkell chefs knife for most things, a kitchen devels bread knife, a small serated ( is it called a tomato knife or have i just named it that?) for fineslicing tomatoes or anything fragile, and a swivel head veg peeler. :-). i lost both tomato knife and peeler acouple of years ago ( trown out withpeelings or washing up water when camping, and it took an age to find replacements that suited me, 2 tomato knives and 4 peelers later i'm back on track!nov grocery challenge, £.227.69/300, 9/25 nsd: , 7 Cmo, 10 egm.
Me, 10 yo dd, and the dog. all food and drinks, in and out, plus household shopping.0 -
Interesting to see what people use. I usually get on much better with thin flexible blades, the thinner and sharper the better for me. I use a (fish) filleting knife for pretty much everything in the way of veg prep. I only switch to another blade for chopping up things like turnips or very large spuds.
I also use a swivel top veg peeler. I cannot manage a fixed peeler at all, I make a right mess of everything and usually severely injure myself if I try.
I've never used a large knife for chopping veg, even though I have a few. I'm just about to start cooking now though, so I will try today and see how I get on.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.

About a year ago, I replaced all my 'old, very cheap and loose-handled' knives with some Kitchen Devils from Mr A. Love them and bought the Kitchen Devil Knife Sharpener at the same time - which I use regularly to keep them as sharp as new
. When I went on holiday recently, knowing what caravan knives are like, I took three of them with me PLUS the knife sharpener - and they made a real difference because I hate struggling with 'strange knives'.
I know that they're not the 'be all and end all' in the World of Knives, but they suit my purpose and feel good/well-balanced to hold.0 -

I use one knife for everything. It's a paring knife - £1 off the market.
If I had "proper knives" I wouldn't have a full set of fingers by day 2.0 -
I (kindly) bought OH a set of Henkells a few Christmases ago, we love them, although we have had a few cut fingers as they are so sharp!0
