    I have a huge santoku knife for general chopping - I can't use the little paring knives now :o The one I'm using right now I only got from Sainsburys and am hankering after a global, but the one I have now is amazing - it goes through everything :cool: I've even used it for peeling.

    A pair of oxo good grips kitchen scissors - much easier snipping spring onions, for example, than having to chop them with a knife.

    A bread knife.

    A carving knife and fork.

    I also use a few knives I got in Lidl which were in a pack of two for 50p. They have a thing blade that I specifically like for peeling and you can't go wrong for 25p each :D I have one of the veg peelers that have a ring that goes on your finger and you peel sideways, think it was an oxo one as well?

    I also sharpen the knives each time before I use them. LondonDreamer - what a present! :T

    I have a set of Global knives and I use all of them. We have a catering business so they get a lot of use.

    1. A big chef's knife for almost everything

    2. What's called a pastry knife (a big serrated bread knife type thing) for bread, tomatoes, carving meat and a few other things

    3. A small paring knife only occasionally

    4. A flexible filleting knife for filleting fish. I once saw a fishmonger fillet a mackerel with a bread knife but I don't think I'd be able to copy him :D

    Once you get used to a chef's knife it becomes very difficult to use a small knife.

    Oh and for anyone who covets Global knives - try before you buy. I lusted after them till I used someone else's and realised that they just didn't suit me at all. They give me callouses and really hurt after a few minutes. I get on better with knives with a plastic handle. I love Victorinox, and in desperation while visiting my mum (whose knives are from the 1970s and as blunt as your elbow) I bought a chef's knife and paring knife from Sainsburys which turned out to be fantastic.

    It winds me up no end watching people using knives badly, I used get the wash-up boys to do my veg prep and was always roaring at them "tuck those fingers in"!

    17cm wusthorf ikon classic santoku (last years xmas pressie from hubby) for pretty much everything except a couple of things I use a small serrated Henckles knife for and a bread knife. I also keep a cheap sabatier for anyone else to use - no one but me touches my knife!

    I agree about trying a knife before you buy -I wanted global for ages but the don't suit me but the wusthorf felt perfect in my hand

    I have the three mentioned as well as a vegetable knife. Its a short blade and handle.

    No where near those prices though :eek: and I've had them for the years. Think Wilkinsons :D I've replaced the veg knife once, as far as I recall, again it would have been from wilkinsons or similar.

    We have a set of Global knives and have no problems at all with them and would highly recommend them.

    I have always lusted after a Sabatier but after those reviews I think I won't bother.

    Interesting to see I am not the only one who has a few favourites and uses a big knife for just about everything.

    I also love my Good Grips Veg. Peeler :)

    I don't really mind what kind of knives I use as long as they are sharp. I usually sharpen every time I use mine. I have a santoku knife for general stuff but my favourite is a small kuhn rikon colari knife which I use for loads of stuff and it's green which makes is extra awesome. :D

    As for bread, I struggled with all kinds of bread knives but couldn't really find one I got on with. So, I got a professional bread knife from Bakery Bits online and it's amazing. It's huge and even the bf who usually cuts bread that looks like a wedge of cheese or a doorstop can use it to get thin and even slices from homemade bread.

  • Was thinking today as I was chopping my onion that I always use the same things for chopping and cutting.

    What do you use mostly?

    In order of use it would be a victorinox (sp) chef knife, same brand filleting knife, global veg chopper (which is my fav knife)and my wusthorf carving knife for joints, hm bread and large tomatoes. Oh and a cheapo palette knife.

    I'd love a full set of any of the above but I guess I don't NEED any others.

  • I have a knife block from Asda that started out around the £20 and I picked up for just £2.50. They have ragged edges so I do have to get a non ragged one or set. I don't have a preference for knives, I don't mind of my food looks a little weird because I chopped it with a ragged knife I would rather the money in my pocket and the knifes have been used daily sometimes multiple times for over a year and are still perfect condition :D Bargain!
