I'd like to have a couple of decent knives rather than having to replace them often. I don't want to spend hundreds and I'm looking for some recommendations. Definitely would like a cook/chef knife and a cleaver along with a small paring/boning knife. I need a set that will be able to cut through vegetables, chicken carcasses and huge ox hearts!
I'm able to buy online, shops like Lakeland or Ikea etc.

I shall be watching this thread. Hubby is after a good set of knives. Might get him some for his birthday.I'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!JUST LOVES THE O/S BOARD0

They're not the cheapest but I love my Robert Welch knives. I don't have a full set (one day perhaps!) but they are great.
I think you can get them from Lakeland but if you google Robert Welch knives you will find a load of places that offer them.
I've also got a couple of good ones from Sainsbubs, although how long they will stay sharp is another issue. The RW ones can be sharpened. If you buy the knife block and knives then there is a built in sharpener, but you can also get the sharpener on its own.

i have 1 wusthof (a japanese style cooks knife) and am saving for 2 more - a carver and a parer.
Love it, I use it every single day and with 1 year of use its cost me less than 30p a day.
I would go to a independent cook shop and try several out - I always liked global knives but they just didn't feel right in my handPeople seem not to see that their opinion of the world is also a confession of character.

I love my knifes...the logo is two little guys and it has zwilling J.A.Henckels Germany on them. Bought them from House of Fraser I think but have seen them on tv used by chefs a few times since i bought them. They were quite pricey but worth it.0

A ex of mine used to run a pub/restaurant and they used to use Nisbets as a supplier for their professional / catering grade stuff that took a daily heavy beating and lasts well. I don't know which brands they used, but a quick browse show they have some nice stuff!0

Knives are really personal things your best bet is to go to an independent (if possible, otherwise good department store) kitchen shop and try out a few for weight and handle shape. I personally use a wusthof large chefs knife for pretty much everything and also have a set of Jamie at home knives which are actually really good for the price. Hope you find the perfect knives for you - cooking with a good knife is a real pleasure.0
