    Can anyone recommend a decent make of knives please? I have been using old cheap ones that I have had for years and it's a bit like using hacksaws!

    I don't mind paying for good ones, but want to be sure that they will be worth it.

  • Can't you sharpen the ones you've got? I've found that keeping my knives sharp makes my (relatively) cheap set, a lot better,,,
  • Personally I have Sabatier which I can really recommend, I've had them around 6 years and I adore them.

  • I have a small serrated Kitchen Devils knife that was left in the house when we moved in 10 yrs ago which I use for everything. The only other knives I use are a bread and carving knife and a very lethal cleaver from the Chinese supermarket - superb for jointing chickens.

    I've had a set of Sabatier ones in a block for over 17 years.
    The two small paring/veg ones have broken....mainly because I dropped them and they landed point down and snapped. Although they had been sharpened many times and the points were getting thin.

    I have just got a new little paring knife, it was from Makro Catermaster range with the colour coded handles :D
    But do invest in a steel for sharpening, it really does make all the difference and to be honest, a blunt knife can be far more dangerous than a sharp one.

  • I've had my Sabatier knives for over 20 years, and they're still going stong ;)

    Was thinking today as I was chopping my onion that I always use the same things for chopping and cutting. I have a drawerful of knives and and a knife block as well but all I use is

    1. A cooks knife. Like this http://www.lakeland.co.uk/15223/Fully-Forged-Cooks-Knife I sharpen it with a steel every time I use it.

    I am looking to get an electric knife or meat slicer to see if they will help but I am dithering. I think the meat slicer will be brilliant for things like slicing my HM bread and stuff like Gammon.

  • I have a Global cook's knife (was a present :j) and a Sabatier utility knife that are reached for first, then a couple of backup utility knives (just cheap ones from TK Maxx, but they're good) for when they're dirty. I would like a carving knife, as I prefer the blade shape for more delicate tasks over the chunky cook's knife.

    I have a meat slicer which I always get out when I boil up a gammon joint as I find it hard to slice thinly enough for sandwiches by hand. Got it in a clearance sale, don't think I would pay full price for one. Depends how often you have joint meats though, I only get them when they're on a really good offer.

    Incidentally, I saw an article on another forum that the IKEA knives are rated almost as high as the posh brands. Could be worth a try for anyone looking for a new knife.

    I have a couple of Sabatier screwdrivers...........or rather that's what my husband thinks they are :mad:
    all because he can't be bothered to go to the garage or shed! :cool:
