There's all sorts of different recipes for stuffing, so you can use what you like! If you're feeling abit more adventurous, I make one for Christmas which apart from the breadcrumbs has onions, celery and walnuts in it among other things and it's like a vegetarian nut loaf (you don't really taste the celery) and is so yummy that you can eat it on its own as a main course (I have, on many occasions).
Basically, for stuffing you need buttery onions and breadcrumbs and Other Ingredients. Experiment!0 -

My favourite stuffing recipe is Bacon, Mushroom & Onion. I saw a chef making it on telly years ago and it's so easy.
Basically you just fry chopped onions, chopped streaky bacon & chopped mushrooms in a frying pan tip it all into a casserole dish (including the oil/fat in the pan) add breadcrumbs and some parsley (fresh or dried) & mix well. Smooth the top, add some dots of butter and stick in the oven for 20-30 minutes.
There's no set quantities, you just make it to taste. I normally use 1 large onion, about 4-5 large mushrooms and half a pack of streaky bacon, then just add enough breadcrumbs to bind it together so it looks right.Dum Spiro Spero0 -
I have lots of frozen sage that I grew this year so I'm going to make my own sage&onion stuffing this year.
I have a question. Should I par boil the onion first? Would it be a better taste?Loved our trip to the West Coast USA. Death Valley is the place to go!0 -
You could 'sweat' it a little first to help bring out the flavour and soften it
