  • someone recently told me they make a stuffing just using bread,butter and onions..saute onions in butter,add torn bread,salt and pepper.mix together,mould into shape,wrap in tinfoil and bake in oven.
    Anyone got any advice or variation on this?
    would like to try it if i had a proper recipe as we dont like packet stuffing,or sausage meat type,or traditional sage n onion.thanks.

  • I've made homemade stuffing using lightly sauted sage and onion, then mixed with breadcrumbs and an egg and cooked in the oven in a dish. It was a little sweet oddly, but nice. You could make something like that without the sage?

    I do something similar for chicken, hard boil 3 eggs, peel then roughly chop them,saute an onion add ginger,garlic, pepper, pinch of tumeric, couple of slices of stale bread cubed then the eggs it turns into mush, season to taste. Stuff a chicken with the mix & enjoy:j
  • It was a revelation to me when a friend said she always made her own, and I've been doing it for years - so much nicer as then you know what its got in it. Stale bread, pre-softened onions to which I add on different occasions : thyme (pref fresh leaves) , lemon zest and juice, celery sauteed with the onion, or bacon chopped small and sauteed with the onions (or even bits of chopped ham), chopped dried apricots etc etc. There's no end to the variations you can do with such things, and then a small egg - which makes it all hold together so leave it out if you like it crumbly. I usually put it in a Pyrex dish, pour some of the fat from whatever meat I'm roasting on top and bake for about 30 mins. Yum yum !
  • I always used to make my own stuffing by sauteing chopped onions in butter, adding milk, salt, pepper and mixed dried herbs (you can use whatever herb you prefer), then adding torn up bread until it was the right consistency. I baked this in the oven in a shallow pyrex (rather than in tinfoil) with knobs of butter on the top until golden brown. This is also handy for bulking out packet stuffing mix.
    It doesn't hurt to be optimistic....you can always cry later. :cry:

    I don't like traditional stuffing so I make bacon, onion & mushroom stuffing instead. Cut streaky bacon into little pieces and fry off with diced onions and chopped mushrooms, mix with the breadcumbs (adding the oil or butter you fried with). Sometimes you may need to add a little extra oil if it's a bit dry depending on how much breadcumbs you use. Stick it in an oven proof dish, dot with butter and bake until brown.

    I saw a chef on TV make this years ago (can't remember who) and adapted it to our tastes. You can add garlic and a few herbs too.

  • I make stuffing for chicken with just breadcrumbs, chopped onions and parsley, adding an egg or some water to bind, a bit of melted butter would be nice there, I do put some herbs in there though, think it might be a little bland with just bread and onion..

    We loved my mum's stuffing and so did everyone else unfortunatly for me as I would have had the stuffing and not the meat, but she minced a onion, bacon and bread and fried it off to brown it in the pan, with a bit of seasoning, then stuffed the chicken or turkey with it, lovely, been a veggie now don't have it but used to really love it.
  • Thanks guys,some realy good ideas there..We actualy eat quite plainly on christmas day..Turkey,gravy,tatties(mash and roast),sprouts,carrots and chipolatas...so some homemade stuffing will fancy it all up a bit..merry christmas.x

  • Mum's stuffing was bread, onions and usually parsley, bound with melted butter. Then she started watching daytime cookery programmes and got a bit more adventurous... like the year she substituted a lot of fresh sage for the parsley, much too pungent (but rescued by adding finely chopped cooking apples to the mix, worked really well!)
