    A fave of my kids still, you can use beef instead of pork mince, and I dont use Greek yoghurt just ordinary plain but its lovely. And also ordinary tomoto puree does fine if you dont want to use the sundried stuff
    Macaroni Topped Mince
    • 2tsp olive oil
    • 1 onion, peeled and chopped
    • 2 cloves garlic, peeled and crushed
    • 400g (14oz) minced lamb
    • 400g can chopped tomatoes
    • 1tsp dried oregano
    • 1tbsp sun-dried tomato paste
    • 200g (7oz) macaroni
    • 1 large egg
    • 150ml (¼ pint) Greek yogurt
    • Salt and freshly ground black pepper
    • 60g (2oz) Cheddar cheese, grated
    • 60g (2oz) feta cheese, crumbled
    • 2 ovenproof dishes
    1. Heat the oil in a large pan, add the onion and cook for a few mins, to soften. Add the garlic and minced lamb, and fry for 10 mins, to brown it all over.
    2. Stir in the tomatoes, oregano and sun-dried tomato paste, and cook for a further 10 mins, until the meat is tender.
    3. Set the oven to Gas Mark 4 or 180°C. Bring a large pan of salted water to the boil, add the macaroni and cook for about 10 mins until “al dente” — tender, yet still with a slight bite.
    4. Beat the egg in a jug and mix with the yogurt. Season well.
    5. Spoon the lamb into the ovenproof dishes. Drain the macaroni and spoon it on top of the meat. Pour the yogurt mixture over, sprinkle with the Cheddar and feta. Bake for 25 mins until golden.

    Just what it says, its salt preserved fish, never tried it though

    Woooooop!!!! One of the old dears from around the corner has just sent her hubbie around with a message that she is sortig out some of his stuff to go to the charity shop, would I like to have first pick to make some gardenning kit for DS2.

    The reason I am so happy is that he's a rather large chappie and plays golf -so I see plenty of good quality trouser material for DS2 coming my way.

    Clairewop - Wraps are super easy to make - loads of recipes on the OS board here for them, yum yum yum :)

    I had my carrot and lentil soup leftover from Friday cold today for lunch as I couldn't be bothered to go and heat it up in a microwave at work and it was divine! Must do that more often ;) Think tomorrow will be a cupasoup and rice cakes as I discovered some in the cupboard whilst hunting for a snack just now.....

    I thought I was going to have to spend 50p today on picking up a book from the library, but when I popped in, the lovely librarian told me I'd already paid, hoorah!! NSD for me today which is fabulous as not even filling up the car on my way back from my parents cost me £45 yesterday :(

    DS1 is having some golf lessons this week - paid for by Grandad's winnings at various golf competitions throughout the year, so thankfully it's sunny.

    Received 6 pairs of trousers and 5 shirts last night - fabulous fabrics and enough to kit DS2 out in 5 outfits each in size three and size four. Sat for a while with the lovely couple - OMG!!!! Talk about the "wisdom of the ancients" - not that they are ancient, only in their late 70's. There is so much we could learn.

    My Mum is only just sixty - so is really too young to pass on the Make Do and Mend ethos, she is really a baby boomer. This couple however, really lived through it - and made me feel completely normal in my knitting socks; sewing clothes, making patchwork, digging gardens, cooking from scratch stuff.................... and given me a few more ideas.

    In fact more than a few ...................... in fact the hubbie walked me home (50 ft but wanted to know I was safe). He said - "sod living your life according to the rules -go and write your own"

    So i'm off to think about what my new rules are - I'm sure FW could host an entire seminar on that - LOL

    Thanks for the tips on using lentils/pulses/oats for fillers! Yet another thing to sneak into the meals & it's true that as long as you don't say what's in it, they will eat it!!! My OH gets his 5 a day without even knowing it - cook it down into a sauce and blitz it & he even eats celery and fresh tomatoes!

    If it's OK to add a tip - Quark is great for homemade cheese sauces - it's lowfat & suprisingly cheap & melts down easily - add a splash of milk to thin, a tablespoon of grated parmesan and some herbs to give it a kick of flavour and it's as good if not better than the pots they stock in the grocery store. A good dollop of tomato paste and a tiny pinch of tumeric can be used to turn it orange if you have little ones who need their cheese to be orange :o
