I am a veggie and last year I made a mushroom, brie and crenberry wellington - basically fry some mushrooms, and then roll out the pastry into an oblong, put the mushrooms along with some brie and cranberry sauce on the pastry. Fold the pastry over the make a sausage roll shape and then cut into slices and bake in the over until golden brown - can't find an exact recipe for this on the internet unfortunately. Tasted really nice and will probably do this again this year.0

We have a chestnut roast - I only make it at xmas time - a 20 year tradition that still goes down well with veggy and meat eaters alike. I make 2 on xmas eve - one we have hot xmas day with all the trimmings and gravy and one sliced cold with new pots salad chutney etc on boxing day.
Recipe-
Now add the breadcrumbs to veggys and then add 2 lightly beaten eggs (i presume they are not vegans but are ovo-lacto veggys?)
Then add enough stock mixture just to moisten it (make it like a sponge mix consistency.) Taste for salt and pepper and add as needed (the stock is quite salty so i add at the end)
Bake in a lined tin (I have a xmas tree cake tin i got from tkmax and serve it in that
) for 45mins at gas 4 etc Can we rewarmed xmas day or served cold.Its fab and very xmassy with the chestnuts - and no one feels deprived. :xmastree:

Sounds like I need to make some calls and find out exactly what they all do and don't eat. The fish eaters eat very healthily - I wonder if they'll eat pastry? I'm pretty sure that the non meat/non fish eater just doesn't eat meat and fish and isn't actually vegetarian (IYSWIM?)

I was vegetarian for 27 years (from the age of 11 to 38). I was given the following recipe and make it every Christmas for myself, even though I do now eat a little meat occasionally. Even the meat eaters like it & so I make a big batch so we can all have a helping. Its so good that if you double up it can be eaten cold at tea time or on Boxing Day with pickles, salad, dips etc. I'm a bit hit & miss with the quantities, but you're aiming for a good thick consistency that you can form into burger/pattie shapes.
Its really simple & here goes........
Finely chop an onion & 5-6 mushrooms & saute til soft
Mix this in a bowl with the following:
4oz/100g grated strong cheese
2/3 generous heaped desert spoons of peanut butter
a good sprinkle of fresh finely chopped parsley (must be fresh not dried if you can)
2/3 table spoons of soy sauce
2/3 table sppon of lemon juice
4 oz/100g of finely chopped/ground peanuts (not salted. Use red skin ones preferably)
4 oz/100g of finely chopped sunflower seeds
Mix this all together thoroughly. If it seems a bit dry, add some more liquid, if its a bit too moist add some mor dry ingredients. Your aiming for a consistency which you can handle & form into burger shapes.
Now make into burgers - make them by hand if you can so they look nice & home made.
You can either coat them in bread crumbs & saute or, as I prefer to do, grill them for afew minutes on each side.
These are so tasty & filling. Your guests will appreciate the effort you've gone to, but the beauty of this is that you can prepare them in advance, even the day before & cook on the day. I tend to grill them about half an hour before dishing up time & then keep them warm in the bottom of the oven in foil so they don't dry out.
I don't know if they freeze well or not cos they never ever hang around long enough to find out.0 -

OOh some interesting recipes on here.
I am a lifelong veggie and I will be hosting Xmas day at mine so wanted to make something special. I fancied a nut roast but had never made one before so went searching and found this thread as I'd missed it yesterday.
I will be the only proper veggie at dinner. My dad eats fish and my mum and brother both eat meat now, and my nan is meat eater. All bar my nan will have some veggie though, and my nan is bringing her own meat dish.
I normally have stuffed tofu - thick tofu slices fried, slit them and stuff with cheese of choice, top with HM sauce of tomatoes, onions, garlic and herbs and cook in oven for 30mins. But I can't stand the new cauldron tofu and haven't found a good replacement yet.

Flutterby, is there a good health food shop near you? You know, a "wholefood" shop type place, not one of the BigBrand ones? There is a range of tofu products called taifun or something along those lines (don't have any in the house atm to double check), and our local shop sells a large range of their tofu, it is delicious, I am not a tofu fanantic, but even their plain one is good - my favourite though had sesame seeds and almonds through it, it is fantastic. I will see if I can fine it online and post the details for you.
Oh I am pleased with myself, I did get the spelling right. You can buy it online here - although this is just the first one I found so you can have a look. I'm another veggie that doesn't like nut roasts.
One thing I might do again is slice a quorn roast length ways then smear some garlic and herb soft cheese (or any) then wrap in pastry. Twas yummy!0
