    Hey guys, I've had to change my username - hopefully you realise who I am from previous posts and my avatar.....

    Quick question - is it ok to freeze something that has creme fraiche in it?

    Hello :) I do recognise you! yup it should freeze fine, tho it may appear to split (like yoghurt does) on defrosting. A stir should sort it out.

    Hmmm you look familiar... ;)

    I imagine it would depend on what it was. I freeze dinners which have creme fraiche in the sauce but I probably wouldn't try freezing a cake with a creme fraiche filling.

    It was cauliflower macaroni (Jamie Oliver's recipe) - I've just thrown it in now - there is only one portion left and it'll probably be me who eats it anyway so if it splits it's not a major problem!

  • A blog I was reading last night was doing mashed cauliflower. Mashed with a hand blender but with additions like mashed potato. I'm intruiged, so am going to try and remember to buy a cauli today and experiment!

    Made some butternut squash soup last night. Half an onion, 2 carrots ( one sad) and 2 celery sticks with about 2 cupped hands full of roasted butternut squash and about 2 pints of stock made with stock cubes. Blended it in the blender.

    Is so nice DH said I must type it up on here !!

    Apparently it's very seasonal and so yum and creamy he's considering it for xmas day :).
    Eat food, not edible food-like items. Mostly plants.
  • Oooo I love squash soup! I do think though that squash/pumpkin is a bit like marmite- you either love it or hate it!

    I have a question; if I were to make the cranberry and cashew nut roast this weekend, would it matter if I substituted redcurrants for cranberries? I have punnet upon punnet of them in my freezer. I already have a mountain of jars of redcurrant jelly and I just can't think what to do with the rest of them. Any ideas gratefully received!

    Hi folks back from trip was not what was planned but was ok nonetheless. Made a broccolli soup when i got home to use up a head i got so will keep us going for a couple of days.
    Went out tonight but was reasonably frugal but im still on hols so........Will try and do better tomorrow.

    I came up with a variation on the toad in the hole last night. We're not keen on meals with lots of gravy, but do like onions, so I chopped an onion and softened it in the microwave for a minute, then just put it in with the sausages before pouring the batter over and cooking as normal. Very nommy :)

    Also a quick question on the lemon cheesecake recipe. What size are the tubs of soft cheese and yogurt please?

    hornetgirl - I'm 99% sure its 500g youghurt and 250g cheese, they're the sizes of smart price ones.
    The very best is sometimes what nature gives us for free.
