Do you have any frozen puff pastry? I would do a square of that, topped with some caramelised onions with balsamic, then a slice of goat's cheese on top. Bake in the oven and serve on a few rocket leaves. Looks good but is dead easy (and is my failsafe starter).
But SS's mushrooms sound amazing and may be what I'm having for my tea since I was trying to think of ways to use us hummous.:DYummy mummy, runner, baker and procrastinator
