Ok here's a veggie one
Slices of stale bread
2 eggs beaten with a splash of milk and seasoned
Grated cheese
Grease an ovenproof dish very well and cut the bread into triangles.
Dip in the egg mix and arrange in dish. Pour over any leftover egg mix
Cover in grated cheese.
Bake in medium oven until brown.
It's very like eggy bread done in a pan but it was in a book of very frugal recipes written by a monk. He had researched what monastery kitchens cooked all over Europe as they often don't get any income as such, just donations. Wish I still had it...0 -
Twice Baked Potatoes
Bake potatoes in the oven, when cooked split in half & take the flesh out into a bowl. Add grated cheese, some cooked bacon or ham bits and onion or another veg of you choice. Pile back into the potatoe skins and put under a hot grill until the tops are brown.

Freeze them after the first bake/mash and fill stage for an emergency teenage snack/accompaniment.
They cook from frozen (in the oven) or you can thaw them but again recook in the oven (Gas 5 ish...depending what else you're cooking.)
Good way, too, of using up extra oven space (making them in the first place)
for a veggie version skip the meat...

Spanish Omelette
Slice and boil potatoes so they're soft but don't fall apart
Fry sliced onions, chuck in the potato slices
Place sliced cheese on top
Pour 3-4 beaten eggs on top/over/in/around
Fry until the bottom's cooked then do one of:
1] flip it over (slide it out onto a plate, put the frying pan over the top of the plate and flip)
2] Stick the whole pan under the grill to grill the top
3] Just flip it over in half and serve as is with a soggy middle
Usually you'd add other stuff in that you fancy or have available; I normally chuck in mixed herbs and a small handful of frozen peas that have been left in boiling water for 3-4 minutes to defrost.
Cheese, Potato & Onion Pie with Baked Beans
Boil/mash potatoes (no need for butter/milk)
Mix with half weight of cheese (e.g 200g spuds/100g cheese)
Mix in 1-2 fried onions
Bake in the oven, sprinkling cheese on top. Probably about 200degrees/350 degrees for about 20-25 minutes
Serve with baked beans (or tinned tomatoes)
Quick Macaroni Cheese & Tomatoes
Boil macaroni until it's done
Mix with grated cheese (no need to make up a sauce)
Shove under the grill to brown a bit
Serve with a tin of tomatoes.
Orange Rice (favourite from when I was young)
Boil rice for 4 people
Fry 8 sausages and 2-3 onions
Tip drained/rinsed rice into the frying pan for 5 minutes
Pour the lot into a casserole dish
Mix in a can of Campbell's condensed tomato soup (and the tinfull of water)
Cover and place in pre-heated oven (200/350) for about 25 minutes.
Serve alone.0 -

One of the hardest simple things to make well, and easy to ruin with over cooked pasta, burnt garlic or rubbish olive oil, but lovely when done right.
I had this for lunch ( no chilli) on holiday in Soller Majorca last year, seated at a table in the sunshine on a flower -filled terrace with a large glass of of chilled white wine. Absolutely simple divine pleasure!0 -
We are having this tonight:
Thai Green Curry
Cubed lamb or chicken
Thai green curry paste (obviously, if you prefer, you can make Thai Red Curry or use an Indian curry paste for a sort-of Korma)
Coconut milk
Double cream
Cook the lamb or chicken. Add the curry paste, coconut milk and cream then simmer for a couple of minutes until thickened.
A nice variation (altho more ingredients) is to add frozen cauli florets and broad beans with the curry paste, coconut and cream. Simmer until these are tender, then add some leftover roasted veg or roasted peppers from a jar to heat through.Love and compassion to all x0
