PORK IN CIDER
Serves 2
INGREDIENTS
250ml of cider
1 apple
1 onion
2 pork chops or steaks
METHOD
Pour the cider into a measuring jug. Peel and core the apple, cut it into thick slices and put them into the cider to stop them going brown. Peel the onion and chop it into tiny pieces.
Put the onion in the bottom of an ovenproof dish with a lid. Put the meat on top. Add the cider. Arrange the apple slices on top of the pork. Put the lid on the dish.
Cook in a preheated oven at 150°C, 300°F, gas mark 2 for about 2 hours. Check the liquid level from time to time and top it up if it starts to dry out.
ADDITIONS & ALTERNATIVES
Stir 2 heaped teaspoons of gravy granules into the onion and cider left in the dish to make the most delicious gravy.
TIPS
Any cheap cider (that doesn’t have the word "white" in the name) will do. The long, slow cooking in the alcohol tenderises even the cheapest meat. The acquisition of wealth is no longer the driving force in my life.0 -

Water, salt, pepper
Pasta
olive oil
garlic
Pinch of dried chilli flakes
One of the hardest simple things to make well, and easy to ruin with over cooked pasta, burnt garlic or rubbish olive oil, but lovely when done right.
I agree. The classic simple meal. I don't use chilli flakes, as I consider them to be a modern and "cheffy" addition. I don't think an Italian would use them. I have also seen this dish on a restaurant menu for £8.50!The acquisition of wealth is no longer the driving force in my life.0 -
(1) Pork belly with (2) roast potatoes and (3) green beans
(1) Pan fried tuna (2) lettuce (3) new potatoes
It's not really difficult is it? Good food doesn't need much dressing with sauces and gravy0 -
Stuffed mushrooms:
4 large, flat mushrooms
2 slices of bread
lots of grated cheese
and an egg
Take out the centre of the mushrooms with a knife and put in the food processor with the bread. Whizz until you have breadcrumbs. Tip into a bowl, season and add some of the cheese. Mix in the egg. Put mushrooms on a baking tray (and non-stick paper if poss), fill with the cheese/egg/crumb mix and smother with the rest of the cheese. Bake in a medium oven (160 fan) until the cheese is nice and brown0
