  • Just before xmas i saw a brilliant little book at Mr Ts which was a cookery book, but all the recipes used only 4 ingredients ( they didn't include the likes of salt/pepper/herbs/spices/oil/butter/milk/flour etc as ingredients)

    I get sick of picking up a recipe book to find i need half of the supermarket to make the recipe.

    I've tried to find the book since but can't:confused:

    I wondered if any of the brill people on here could add there own recipes, using just four ingredients? but lets not include beans on toast etc:rolleyes:
    Or does anyone know where i can get the book from?

    Just I wondered if any of the brill people on here could add there own recipes, using just four ingredients?

    I've never been compared to a fish before. :smiley:

    Italian cuisine is really good for minimalist cooking. For a start, just boil some spaghetti, drain and toss with some grated Parmesan cheese.

    Mozzarella & Tomato Salad: Cut a lump of mozarella cheese, a beef tomato and an onion into slices and arrange artistically on a plate. Sprinkle with chopped basil and drizzle with a little olive oil.

    GARLIC & OIL PASTA (AGLIO E OLIO)

    Per Person

    INGREDIENTS

    1 clove of garlic
    125ml of water
    100g of spaghetti
    1 tablespoon of olive oil
    Ground pepper to taste

    METHOD

    Peel the garlic and chop it into tiny pieces. Put the oil into a frying pan on a moderate heat. Add the garlic. Fry the garlic for about 5 minutes until it is brown, stirring to stop it sticking.

    Put the water into a saucepan and bring to the boil. Turn down the heat. Put the pasta into the water. Stir it once to stop it sticking to the bottom of the pan. Bring back to the boil and cook according to the instructions on the packet.

    You can trust the cooking time if you want to, or put a bit on a plate and cut it with the edge of a fork. The best way to judge if pasta is cooked is to bite it. This is tricky, because if you fish out a bit and stick in your mouth you may burn your mouth on the boiling water. Wait a bit and blow on it, then bite it. If it is hard it needs longer. If it is soft it is overcooked.

    Drain the pasta well in a sieve or colander. Put the pasta in the frying pan with the sauce and stir until thoroughly coated. Season with the pepper.

    ADDITIONS & ALTERNATIVES

    Use any other long thin pasta, like linguine (thin and flat) or spaghettini (very thin and round), instead of spaghetti.

    TIPS

    Adding a drop of olive oil to the water stops the pasta sticking.



    BASIC TOMATO SAUCE

    Enough for spaghetti for 2

    INGREDIENTS

    2 cloves of garlic
    2 onions
    2 tablespoons of olive oil
    400g tin of plum tomatoes*
    2 teaspoons of basil, oregano or mixed herbs
    Salt and ground pepper to taste

    METHOD

    Peel the garlic and chop it into tiny pieces. Peel the onion and chop it into tiny pieces. Put the oil into a frying pan on a moderate heat. Add the garlic and onion. Fry the garlic and onion for about 2 minutes. Stir them every half a minute or so.

    Open the tin of tomatoes. Pour the juice into the frying pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan). Pour the chopped tomatoes into the pan. Continue to cook, stirring as the mixture boils. Add the herbs. Season with the salt and pepper. Cook for another 5 minutes or until the sauce has reduced.

    ADDITIONS & ALTERNATIVES

    This sauce can be made even better by adding a glass of wine and cooking a bit longer.

    * Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
    The acquisition of wealth is no longer the driving force in my life. :)

    No, things like flour/oil/milk/eggs/salt/pepper/herbs etc aren't included.

    My favourite subject; minimalist cooking.
  • Chicken, Pea and Pasta Broth.

    750 ml of chicken stock
    50g Tiny Pasta shapes.
    I cooked chicken breast, skinless and shredded
    50g Of defrosted frozen peas.
    (parsley to garnish)

    1. Heat the chicken stock in a pan, add the pasta and cook until just tender - about 8 minutes.
    2. Add the chicken and peas and cook for a minute until heated through. Season then stir through the parsley and serve.
    Simple and only 4 ingredients (exc parsley which is optional)

    Tuna Pie

    1x Tin Tuna
    1x Tin veg soup
    Mashed potato
    Cheese

    Mix tuna and soup together in oven proof dish

    Top with mash potato and cheese

    Put in oven until browned

    we have this book, i'm not a fan of it, but my daughter makes things from it.
    There is nothing either good or bad but thinking makes it so.
