My meal planner looks rather dull in comparison as I only have me to cook for, which means lots of yummy leftovers for me!
Mon: Cheesy Mash and chicken bake with steamed carrots
Tues: " " leftovers
Weds: Steak Fajita's - YUM!! (Some reduced offer steak in the freezer calling my name)
Thurs: Chicken and butterbean Cassoulet with brocolli
Fri: " " leftovers
Sat: Chicken curry with mini paddadoms.
Sun: Veggie Chilli.
(Guess who bought a whole chicken and portioned it today...)
Lunches are either sandwiches or some smoked mackrel I got cheap, couscous and salad.
Man, I'm HUNGRY!!0 -
Ok, so this week we are having:
Sun: Beef stew and dumplings (out all day so no roast), pineapple and golden syrup sponge and cream
Mon: Twice baked chicken legs and cous cous (didn't eat these last week)
Tues: Mince and pasta
Wed: Roast chicken and all trimmings, jam sponge pudding and custard
Thurs: Pizza and salad
Fri: chicken rissotto
Sat: sausage, chips and beans
I like the idea of recording it here - my 'menu plan' is usually a scruffy bit of paper or back of envelope that gets put in bin half way through the week. So at least if its here I can find what I meant to do:rotfl:Taking control, slowly.:rotfl: :rotfl:0 -

Thrift lady here is the link for the book.... the book itself is not that great for recipes but I picked up loads of time saving tips .... here is one of which i still do today.... before starting i would chop up onions mushrooms, grate a block of cheese and anything else etc... have them sittng in bowls ready to use before i start i would use 3lb of mince cook it and put onions on it... then make two mince and onions pies, add peppers mushrooms and make bolognese sauce by this time the mince looks bigger with the extra ingredients added in... then i put some into freezer bags for spaggetti bolognese along with a bag of grated cheese with each one. then with the remaining mince i would make a large lasagne let it set then cut them up and bag them! so out of 3lb of mince i would have 6 or 7 meals for 6 of us!
Do the same with chicken .... cook a bulk of chicken chop them up and add curry sauce, sweet and sour or what ever and bag them it is really time saving and to be honest the book is only good for ideas and tips rather than recipes.

Thanks thriftlady, I know what you mean, my meal plan didn't go to plan! Managed to follow about 4 days of the plan. If I didn't work full-time then I'm sure I'd be able to plan and stick to it, but life is just too busy sometimes.
I've got a 3-day plan though - maybe I should start small and try to build on this!!!
Monday - Pizza (probably with chips)
Tuesday - Steak Pie with potatoes and veg
Wednesday - Chicken with lemon sauce and boiled rice (not made last week)
I've made a list of everything that is in my freezer and have enough meals for the 2 of us for about 30 days. The challenge is to use up the majority of this stuff, defrost the freezer in time for Christmas and enjoy re-stocking it! I have about £140 budget for groceries this month and plan to only buy veg a day or two in advance.0
