I've never thought about pie-ing roast 'tatoes, but it sounds great. We always have roast veg left too, and I can feel myself saluvating at the thought of pie.
Mmmm. Piiiiiiiiiiiiiiiiiiie.
I do something similar - any left over veg and meat gets chopped to same sized bits, shove in a dish mixed with gravey - either the roasts left overs or freshly made stuff and then top with mash (normally add sweetpotates, carrots and courgette to the mash). My mother commented how gross it must be to have roast potatoes topped with mash - but she's never tried it - its' delish!!!!"Start every day off with a smile and get it over with" - W. C. Field.0 -

Make pastry & line pie dish, par-bake for 10 mins or so if you are prone to undercooked pastry or leave if you are one of the lucky people whose pie bases are always perfect no matter what:rolleyes:
Wait until cool then pick carcass/bones clean & divide up into however many meals worth (I usually get a pasta bake & a pie out of mine) I divide into bite size peices for the pie & smaller bits for the pasta bake. Chuck meat into pie base, add whatever veg you have leftover, I always do roast veg with a roast (less washing up;)) so might be carrots/squash/courgetts/fennell/sweed/mushrooms but if a bit thin add a handfull of sweetcorn or peas. Chop up roast spuds to smaller bite size peices & add. Thicken gravey to quite thick but still pouring consistancy (or use a white sauce on chicken if you like) & pour over then add pie top. Egg wash & poke steam hole in top then bake until the pastry looks done, about 30 mins on 175 ish.
The trick is to make sure there is pleanty of veg in it (I cook extra), you don't need so much potato as the pasty makes up the carbohydrate balance, but if there is enough meat & veg you have basically got an entire meal in one dish:D.

Here's my problem:
Food that me and DD2 like: virtually any pasta dish, chicken curry, rice, egg fried rice, roast dinners, baked potatoes, shepherds pie, stew, pizza, prawns, salad (and much more - its too much to list!)
Food that DH likes: Roast dinners, any sort of fry up, pizza, pies, chip shop takeaways, shepherds pie, (will eat stew but not keen really).
Food that DD1 Likes: roast dinners, ready made pizza (won't eat HM), oven chips, shepherds pie with chicken instead of mince, stew, cheese and ham toasties.
The fact that DH and DD1 are so fussy makes my life so difficult. I would cook up all sorts of rice and pasta dishes but its only me and DD2 that will eat them and I end up having to make something else for the other 2!
This is my typical weekly menu:
Sun - Roast dinner (usually beef or lamb) with yorkshire puddings
Mon - Me and hubby make 2 extra sunday dinners for us to eat today. DD1 has pizza or I'll cook her mashed potato with something (lamb chop today) DD2 has pasta sauce made with sausage & carrots that Ive made previously and frozen.
Tue - I have HM Chilli Con Carne, DD2 and hubby have sausage and chips and DD2 has oven chips and pizza
Wed- Im always stuck for ideas on a Wednesday. May do shepherds pie this week
Thur - Stew (we all eat this. Hurray!)
Fri - So fed up with trying to think what to cook that I have HM Chilli Con Carne myself and make everyone else go down the chinese/chip shop.
Sat- Don't usually decide until saturday. Quiche, salad and chips is usually what we have and DD1 gets herself a takeaway pizza because she doesn't like quiche or salad!
Does anyone else have the problem of cooking different things for different people all the time?
Hi Beachbeth, me, OH and DD all eat most things, DS can be fussy about some meals, I always try to make a variation of whatevers on the 'main menu' for him, or I make sure theres chilli/curry or bolognese in the freezer for him whenever we're having something he doesnt like. If we have a chilli, which DD doesnt like, she will settle for making her own stirfry or a quick pasta sauce. I know its hard when one family member doesnt like whats on the menu, sometimes you can feel like your running a restaraunt (sp)not a home.
