Well done Penny Pincher what a brilliant thread.
I meal plan sun or mon for Mondays to Fridays meals. Nearer the end of the week I work out the weekends dinners when I know what we are doing. Lunches are generally sandwiches or salad.
Mon - Gammon, mash carrot. (Slo cooked it yesterday will give it a quick roast today with honey and mustard.
Tues - Left over gammon in omelette with cheese. Poached eggs and gammon for OH
Wed - Saus, wedges and beans/sweetcorn
Thurs - hm curry, hm tandori drumsticks rice & poppadoms
Fri - gonna try hm tuna fishcakes with peas/salad.
With regards to fruit and veg - the kids have it in their packedlunch and as snacks throout the day & often for dessert. They also have a snack as soon as they walk in from school such as pitta bread and have raw carrots and cucumber with it.
For the poster who asked about slo cooked gammon I just put it in the slo cooker with some fresh orange juice and enough boiling water to cover the bottom then forget about it all day. If Im pushed for time we eat it straight from the cooker or I'll finish it off in the over with mustartd/honey and brown sugar basted over it. If im really going for it I will also put cloves on.0
