Baked lentils are made with the big continental lentils not the red ones. Red ones cook to a mush but continental one hold their shape. The recipe is here

Ah ok, thanks, I've never tried cooking with the big lentils, will have to try them. Maybe I'll try one of the soups on the lentil thread with my red ones.I've been lucky, I'll be lucky again. ~ Bette Davis0 -

I'm quite new to this OS thing but I'll post my menu anyway (not sure what order it'll be in yet)
Spaghetti with meatballs in a spicy tomato sauce
Chilli with rice and salad
Chicken curry, rice, onion bhajis etc
Crunchy yoghurt chicken with some sort of potato dish
Spanish omelette with salad
Seven layer tortilla pie
Leftovers or onion, bacon and potato hotpot
Extras, puddings etc:
Creamy coconut macaroons
Caramel chocolate shortbread
Quiche
Apple Pie
Chocolate mousse or syrup sponge
I'll make a large quantity of spicy tomato sauce, which will do the spaghetti and chilli and possibly the tortilla pie Make double rice for the chilli and curry.
It's quite a boring menu, but with lots of flexibility - I could make double the mince needed for the chilli, mix with tomato sauce and have a lasagne if I feel like it. I've got quite a full storecupboard as well, so I can chop and change as necessary.We must all suffer one of two things: the pain of discipline or the pain of regret and disappointment0 -

Sun 8th BBQ Chicken Drumsticks, Egg Fried Rice & Corn on Cob
Mon 9th HM Burgers, HM Chips, Peas, Sweetcorn
Tue 10th Pork Steak in onion gravy, Potatoes, Yorkshires & Veg
Wed 11th HM Meatballs in sauce & Rice
Thur 12th Sausage, Egg, HM Chips, Beans
Fri 13th Beef in Red Wine, Roasties, Yorkshires, Veg
Sat 14th Meal Out – NAN'S 90th BIRTHDAY MEAL
Sun 15th HM Pizza
I have meal plan for month so have all ingredients in for meals for month just need to get fresh veggies from greengrocer, he only stocks local stuff so whatever is in season, I usually go in daily and get what I need.
Lunches are usually sandwiches (DH takes pack-lunch) or girls like cheese and crackers or scrambled egg. As for puddings we usually have SF jelly with yoghurt or just yoghurt or cake, basically whatever I have made. Pancakes are nice too and filling.
Have been inspired by another post to make a steak pudding (you just cannot get them down south!!) must have a hunt in the local charity shop for a pudding basin. Might do that next week as had something mincey planned one night so would not need to buy additional ingredients.0 -
Lunches for us are normally-leftovers, baked spuds, soups or sarnies. DD has a free school dinner, but at weekends she has what we have for lunch. Breakies are normally toast, or egg, cereal and fruit juice.
Always have biscuits, crisps and HM cakes in..and of course fruit. We all eat a minimum of 5 a day though.

i love this thread, i have just printed a monthly menu planner off organised.home.com to fill in, so far i have got 2 weeks filled in, this is the first time i have attempted to a monthly one:eek:
here is week 1 from monday
chicken jalfezei (sauce from hb 39p jar) with wild rice.
chilli, rice and jacket potatoes with grated cheese
chicken pie, boiled potatoes, veg and gravy
sausage, mash and beans
skinnless fresh fish with pasta n sauce
takeaway night chinese ( at work all day)
chicken omlette chips and curry (work again , all day)
lunches and suppers will be sandwiches, left overs etc.

What a splendid thread!
This week, we are eating:
HM fish pie (in freezer - made loads as I HATE cooking fish) and veg
HM minced beef and vegetable pie with veg and extra gravy
Pasta and HM carbonara sauce
HM chili (meat sauce pre-cooked in freezer - just need spices) and rice
Pot roast beef with roast spuds, veg and gravy
Fish in breadcrumbs, peas & sweetcorn, potatoes (I admit it - this breadcrumbed fish is from the shop :eek:)
Cold sliced beef, bubble & squeak, veg & gravy
Breakfasts are cereal & raisins / fruit or pancakes at weekends;
Lunches are sandwiches, soup, yoghurt, fruit - no fights over who has a lunchbox and who comes home for lunch that way.
Bit heavy on the red meat this week, but the heating's broken so everyone needs filling up properly. Puddings are usually fruit or HM yoghurt, unless it's freezing when it's stewed fruit & custard.

O.K, this is my extended version of a recipe, I am terrible with measuring so usually just roughly add what I think is appropriate.
500g Chicken (I use breasts) cubed
1 onion chopped
2 cloves Garlic chopped
1 pepper (I use red)
1 tin kidney beans drained
1tbsp Tomato Puree
1 tin chopped tomatoes
250 ml stock
250 g mushrooms
1 tbsp ground cumin
1tsp chilli powder
1 tsp dried oregano.
I fry the onion and chicken in a little bit of (olive) oil until they start to brown and then add the garlic, after a couple more minutes I put in the spices and stir those round to cook them a little and then do the same with the tomato puree. I then add the tomatoes and stock and oregano, bring it up to the boil and add the mushrooms, peppers and kidney beans, I season and let it bubble on a low heat for 25 mins.
We serve this with plain rice a green salad and a dollop of low fat Creme fraiche on the top, coriander is nice to add if you have it and like it. It is a really tasty and nutritious low fat meal and one of our favourites.
I hope it turns out o.k, I don't use a recipe book for it any more and probably tend to use a little more chilli powder than the 1 tsp as we like it quite spicy. The cumin, mushrooms and kidney beans were never in the original recipe but I find they add a little more bulk and flavour.0 -
