Freezing Lemons

When I buy a couple bags of good lemons, I give them
a wash. . .
coursely blitze them in the blender. . .
spoon them in mini silicone cupcake/icecube trays. . .
and freeze!
This way (once bagged up frozen) I can use one 'cake/cube' in a mug and heat in the microwave with a dollop of honey and a drop of boiling water.
I find this blitzed way:
1) reduces the amount wasted - I used to cut up half or a whole lemon for a hot drink, but still found, once drunk, that the remnants could still serves another (smaller) hot drink. By putting it all in the blender, it works out that only a quater of a whole lemons is used effectively. From 4 lemons I've got 24 'cakes' produced.
2) breaks up the skin releases, so more of the lemon oil, which make the drink a bit less sour and gives it a 'lift'.
And yes, you do bits of seed in there, but it's nothing to worry about. I've often made this hot toddy for others who may be getting run down too and they end up drinking the lot (seeds, bits n all)!0 -

Warning (but don't fret/worry over this) , re. frequently drinking lemon juice from bottled lemon juice.
Even though it seems ok to drink, but after a while a certain preservative they use in manufacture builds up in your body can cause severe pain - it happened to me.
I used bottled lemon juice when making a hot honey n lemon drink DAILY, for over several months (almost a year). I needed to up my immunity and metabolism levels, stave off other peoples colds, etc. I then found it helped detox and reduce my bloated weight (nice!).
But after a while pains around my chest and what felt like deep inside my lower back and abdomen, was aching BADLY. Over a couple of days, this developed into sharp chest pains, finding it harder to breathe.
Before the breathing probs, I tried stretching more (thinking it was general aches or gas) then checking my diet by eliminating things. It was then I found that what was so convenient for me (bottled lemon) was the problem - Preservative E223 (sodium metabisulfite).
I eventually got better by drinking loads of fresh water to flush out the toxin and hardly eating anything.
So nowadays, bottled lemon is something I rarely keep in my kitchen cupboard, plus I enjoy now the taste of fresh fruit lemon on foods and drinks (and over fingers after eating).0
