    I have frozen lemon slices before to use in cold drinks straight from the freezer.

    You could also squueeze the lemons and just freeze the juice for use in cooking and baking, ice cube trays are ideal for this as you can just pop out a couple of cubes at a time to use.

    simply slice them or freeze them whole if you will use them whole, no problems at all. if using for drinks just pop them in and have an ice cube as well
  • I slice mine and put them into sealy bags. I can then just take out what I need, when I need it.

    I keep a bag of frozen lemon slices in the bottom of the freezer for my G&T at the weekend. It's best to open freeze them on a tray so they don't stick together-I use the lid of a tupperware box. Then just bag them up when frozen.

    You can freeze limes in the same way and in the summer I freeze sliced oranges for Pimms.

    If you do this, don't forget to zest them first and freeze that as well. I'll even freeze the empty shells as well to pop into the cavity next time I make a roast chicken. Still gives off enough lemony goodness from something that would otherwise get thrown away. :)
  • i have frozen them whole and used them for cooking very successfully.
    Opinion on everything, knowledge of nothing.
  • Lemons will last for months unfrozen if kept cold and dry :) We are still using lemons bought just after Christmas by keeping them like this.

    The skins will go dry and leathery but when you cut them up.... Tah-dah! the insides will still be soft, sweet and full of juice :)

    I always slice & freeze lemons & limes to use for cooking & putting in drinks.
    Try to be a rainbow in someone's cloud.
  • I keep a lemon in the drawer at the bottom of my fridge for ages .I also slice and open freeze them You can freeze them whole but they take up valuble space in the freezer sliced and once frozen they can be bagged up and use less space .or make half lemon juice half water ice cubes for summer drinks or winter G&Ts :):) I usually pop my lemon into the m'wave for about 5-10 seconds it seems to give more juice out then .Grated peel keeps well in the freezer as well for cakes etc
