Leek and celery soup. Just saute chopped celery and leeks for 10 mins, add vegetable stock, simmer for 20 mins and whizz up. Serve with cream (I attempt to draw the Hulk in cream for my 6 year old!). I never add too much stock to my soups because I like them thick. Also means the children eat more veg and slurp less water! You can add a tablespoon of rice to any soup before simmering to thicken it (it will need to be whizzed!). I could live on soup.:j0
