Hi all,
Hope I am in the right place...
I need to bake a cake for a meal night that I am having with my friends (more MSE to stay in an each bring a bit we thought!).
One of my friends is on a dairy free diet so I'd really like to bake a cake that we can all eat. Any ideas please?

You can get 'dairy free' margarine - Vitalite is a brand but most of the supermarkets do their won versions - Sainsbugs definitely do!
That's the 'fat' sorted - I'm sure someone else will help if it needs to be egg free as well cos the dairy free i have to make is really only the 'fat' aspect

Are they soya intolerant or just dairy?
To be honest most margarine will do if its only dairy! Stork is great as a hard margarine and any soft one pretty much will not have dairy in it at all.
How about making something like flourless chocolate cake? Re eggs-this is from the vegan society:
instead of 1 egg, you can use...
1 tbsp gram (chick pea) or soya flour and 1 tbsp water
1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
2 tbsp flour, 1/2 tbsp shortening, 1/2 tsp baking powder and 2 tsp water
50g tofu blended with the liquid portion of the recipe
1/2 large banana, mashed
50 ml white sauce
I've tried 1 tbsp soya flour and 1 tbsp water-I used 2 tbsp water as it was a bit thick.

You can but vitalite or pure margarine which is dairy free as a recipe for butter, and soy milk in place of milk. Lactose intolerant here too. I use Pure as a spread and it is fine for baking but I use Stork (in the gold packet - the tub has buttermilk) for that as it's cheaper. Makes yummy everything too. :j0

soya milk ditto
and you can even buy egg replacement powder
but id try the egg alternatives already mentioned]

Depends on what thier definition of 'dairy' allergy is, for some strange reason people assume that if you cant drink 'normal' milk (what makes a cows milk normal? we're humans not cows!) then you cant eat eggs.
best to ask the person what they use in regards to milk, cheese, double cream, etc

Sorry, but I have to disagree with this! Being lactose intolerant, there aren't many spreads I can have as most of them add some form of dairy for flavour - usually whey powder or buttermilk. For baking, packet Stork (not the tub!) is good and quite cheap. A lot of recipes are also fine to use oil instead of solid fat. If the recipe calls for milk, any non-dairy milk is fine. I prefer rice or almond for baking, but sometimes use soya.
Anyway, my favourite dairy free cake is this apple cake on Smitten Kitchen. It always gets rave reviews when I make it for others. Lovely at this time of year too!0
