The Desire vs Galaxy S debate has been done to death. I'd suggest the OP goes and reads some reviews on both phones, and also checks out XDAdevelopers for info on both models. You get a much better overview of what issues a phone has over on XDA than you do on here. After all, it's what they do!

I'm in the same position as you at the moment. But this is what I think:
Both have brilliant screens but the Galaxy S has a s4" screen (0.3" bigger than the desire)
The Galaxy has bluetooth 3.0(However it is not used in many devices atm)
It also has wireless n but the desire can be easily hacked to also have wireless n
The Galaxy S has no camera flash
The touch wiz software on top of andriod on the Galaxy S isn't as good as on the desire.
The Desire also feels/ looks better in the hand. It is made of glass/rubber/metal while the Galaxy S is made of just plastic.
That's my opinion anyway!
The Galaxy S isn't just made out of plastic! It has a 4inch gorilla glass screen, for starters. It has a metal bezel. Touchwiz can be replaced with launcherpro or the like. The Galaxy S has nightmode which more than makes up for no led camera flash. It has a better processor, etc, etc, etc...
Oh, and don't forget the Desire has far less internal memory to the Galaxy S.... 8 gigs in the Galaxy S. Galaxy S also has a front facing camera, Bluetooth 3.0, DNLA, much better battery life....In a rut? Can't get out? Don't know why?

Thanks... stupid technophobe question coming up... is data just internet? I am making sure I have internet included in my package this time anyway if it is.
I do like the idea of an Iphone but was put off by the problems they were having with them a few weeks back? Have these been completely sorted?
Anyone know anything about this new Blackberry or have I completely imagined it

If not then the answer is NO.
You need not be browsing the web to be using data, if the connection is left on your phone will be syncing things in the background, like email, facebook, twitter etc.
If you don't use these things then it is not an issue.
I use juicedefender on my Desire to manage my 3G connections0
