After reading the posts about this book I couldn't resist ordering one, Postie has just delivered it :j
Had a quick skim through and oh joy loads of the recipes are to serve 1 or 2. As I live alone but really enjoy cooking it is such a relief to get a cookery book that saves me from calculating down recipes or making a family sized batch that tends to sit in the freezer for months. Delia's "One is Fun" can sit and gather dust for a bit, while I try these recipes out
Only problem I have now is deciding on what to try out first.

I just made the Donner Kebab, and to be honest I was a little dissapointed - it was a bit dry, flaky and fell apart when I was trying to cut it up. I did rinse the mince right before cooking - could this be the culprit?I always tell the truth. Even when I lie.0

I would neve recommend rinsing mince - there is no need, and it will remove the natural juices which keep mince moist and tasty.
You also need mince with a good proportion of fat in it. i also added minced onion to my mix as I know this is what is in the real thing.Think big thoughts but relish small pleasures0 -

Yes.
The fat keeps the meat moist whilst cooking and will run off during the time it is in the oven.
This is the reason it works better with fattier low cost lamb mince, never buy best quality it will be dry once the kebab block is cooked.
Don't use frozen mince either, fresh it best.0 -

Borrowed the book from the library but didn't get round to making anything so when in town last week I found the book going cheap so bought it. May try a chinese recipe on fridayLucylema x :j0

I am sure my mil used to do that when she was on a low fat diet, ie fry the mince until brown, place in a sieve and pour boiling water over it to remove the remaining fat. Then put the mince back into the pan to heat up.0 -
