Or you could make frozen yoghurt? I had some that needed using up and I added caster sugar to taste and vanilla extract (around 1/2 teaspoon for a 250ml pot). But I think it would be nice with mint or honey either.
Whipped it all up together and then put it in the freezer, after 30 minutes gave it another whisk to break up the crystals - back in freezer. I did another whisk after another 30 minutes then left in the freezer until I needed it. Yumtious!
My boys loved it as well - they would not eat greek yoghurt normally.
Also a friend of mine uses greek yoghurt instead of cream in her pavlova.O/S Weight Loss 1.75/80 -
serves 4
3 tbsp fresh chopped coriander
1 crushed garlic clove
1" piece of fresh root ginger, grated
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp cayenne pepper
150g yogurt
4 x 125g salmon fillets
Preheat grill. Mix together the spices with the yogurt in a flattish dish or bowl. Put the salmon in the bowl and turn to coat. Grill for 7-10 minutes turning over halfway. If there's some of the yogurt mixed that doesn't cling to the salmon spread nearly half of it on to the fish once it's on the grill and the rest after turning the fish. Serve with lemon or lime wedges to squeeze over fish.
Will definitely be trying this next time I get some salmon! Sounds delish.:)
As for the glut of yoghurt, I often make quite spicy chilli con carne and top it off with a couple of spoonfuls of greek yoghurt. Though frozen yoghurt is also a great suggestion, especially now the weather is getting warmer.Dec GC; £208.79/£220

It makes a nice change from poached salmon. Also it works with frozen salmon (a lot cheaper than fresh but IMO not anything like as nice but with this recipe it's not bad at all).0 -
If it's unsweetened make cheese!!!! mmmm. I don't know the exact recipe, but there's plenty of them on this board. It's pretty much just adding lemon juice and straining through muslin overnight. I've been dying for an opportunity to do this, but we never have any left over yoghurt, doh!
