Any ideas for greek yoghurt??

    Ive got quite a few tubs of greek yoghurt that need using up, and apart from the usual coleslaw and topping for cereals im pretty unispired.

    Just wondering if any of you had some nice baking ideas that are pretty cheap to make?

    I can't think of any baking recipes using lovely thick yoghurt (I'll be back to check this thread to discover some). I'd consider making a batch of tzatziki, or however you spell it. It just cries out Greek holidays *sigh*

    Might it be a much thicker substitute for buttermilk in recipes? I think some experimentation needs to be done.

    I imagine you could leave out the orange blossom water in the syrup as I don't know how easy that is to find!

    I use it it curries and to make Tzaziki! But then again... I have a weakness for Tzatziki :o

    I think you can use yogurt... but with the paprika I think sour cream works better...!

    Why don't you freeze the yogurt??

    You could send it my way - am eating tonnes of it with some yummy HM jam to help my gut ward off the effects of super strong antibiotics!

    I don't cook much with it, it is so nice with a bit of something sweet to jazz it up - have you tried it with honey and sunflower seed kernels/sesame seeds? Or a chunky fruit jam? Or on fruit salad? Or with a sponge dessert instead of cream?

    I think you could use it instead of cream in a cheesecake. I sometimes add it to HM icecream to make it less rich - turns into a hybrid icecream/frozen yoghurt which is so yummy.

    I'm sure if you thinned it down, you could use it in scones or pancakes instead of normal milk.

    A friend used to make a lemon yogurt cake years ago which was delish, notice Jamie has a recipe that looks similar.

    serves 4

    3 tbsp fresh chopped coriander
    1 crushed garlic clove
    1" piece of fresh root ginger, grated
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/4 tsp cayenne pepper
    150g yogurt
    4 x 125g salmon fillets

    Preheat grill. Mix together the spices with the yogurt in a flattish dish or bowl. Put the salmon in the bowl and turn to coat. Grill for 7-10 minutes turning over halfway. If there's some of the yogurt mixed that doesn't cling to the salmon spread nearly half of it on to the fish once it's on the grill and the rest after turning the fish. Serve with lemon or lime wedges to squeeze over fish.
