    Hi everyone, really pleased your meet went well.

    Lesley, is your tank big enough to consider growing some edible fish? I was reading about people with tanks of edible fish on a homesteading blog. Might be fun!!

    Tonight I had planned for sag aloo. On returning from a shopping trip, I discovered I had no potatoes :mad: So instead, I have made a cauliflower curry with the same spices, a spinach curry with the one potato I found rolling round the back of the drawer, using the old sag aloo recipe from 50p days (mmmm cumin mmmmm), and a lentil and bean dahl from the half can of beans lurking in the fridge. We will be eating these for days LOL. I have also made some naan breads from this recipe http://www.manjulaskitchen.com/2007/05/22/naan-bread/. This website is a real gold mine of vegan and vegetarian indian recipes. The naan are stunning, we love them, you can even make them on the bbq :D. it's bit dull here today so a good day for something warm.

    I have also dehydrated some cherry tomatoes and put them in some oil, ready for doing the pepper pasta this week. We are off on hols on Thursday, so that might be a good one to do then.

    ooh, fish, hadn't thought of that - good idea. I prob could get a few in there, unfortunately OH doesn't eat fish of any sort I'm afraid

    PinkHayley, this is the Sweet Bean Curry recipe, I remembered that I had posted it on the 600meals for 50p thread

    Sweet Bean Curry

    Serves 4

    175g red kidney beans, soaked overnight
    25g butter or spread
    1 sliced onion
    1 apple, cored and chopped
    175g sliced mushrooms
    1 tbsp curry powder
    25g flour
    570ml bean stock
    Salt to taste
    1 tblsp lemon juice
    1 tblsp chutney
    50g sultanas
    50g coconut cream

    Drain the beans, cover with fresh water and cook for about an hour until soft. Boil fast for the first 10-15 minutes as they have something not nice in them (can’t remember exactly what) that you get rid of with the fast boil.

    Or use 2 tins, or any other beans/combinations of beans that you have/fancy

    Sizzle the onion in the butter/spread until transparent. Add the mushrooms and cook until the mushrooms caramelise, add the apple and curry powder and cook for a couple of minutes.

    Add the bean stock, seasoning, lemon juice, chutney, sultanas and beans and cook for 10-15 minutes. Add the flour if you want to thicken it up a bit, otherwise, leave it out

    Just before serving, add the coconut cream and stir until dissolved.

    We have this with some basmati rice, also works well with mash. Sometimes we have veg with it, sometimes not. Freezes really well. I find that a 6th of this recipe is enough for me, especially if I am having a little rice with it and even more so if I have some crispy green veg.

    My OH likes hot and spicy food, so I often spice it up with a couple of hot chillies, but it has enough flavour not to need it if you don't want to use hot spices

    A leftover night for us tonight - CFR Bubble & Squeak, Stuffing and BNS squished together a bit in a bowl, plonked it in the Remoska, top smoothed, left for approx 30 mins, served with a poached egg and some baked beans.

    We alway eat odd combinations on DH's late shift as I take the opportunity to use stuff up.

    I'm planning on the onion tart tomorrow.

    DH is rostered off the next day so I can make the component parts for the Bacon and Onion Pudding and leave him to look after it whilst I go to work.

    I'll probably need his help with the Calzone so I'll make the parts on Wednesday night ready for Thursday. If we manage it, I'll then attempt the bread.

    When I do the bread I might try it with wholemeal flour as I cannot get wholemeal loaves to work in my breadmaker.

    I like the sound of the saag aloo. I noticed it's marked as "freeze well" which is great! I always thought potatoes went funny in the freezer - has anyone tried freezing this yet? Also, is it possible to freeze cooked rice?

    What I'd like to do is make my own ready meals. When my ME is bad, I can't even manage to cook rice or pasta so having meals I can just shove in the microwave or oven would be great.
    Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)

    I froze a previous version of saag aloo regularly, and it always reheated fine. Freezing rice is fine when you have a microwave to reheat, it can be a bit tricky to reheat efficiently without.

    Well it's worth a try! I will try it the next time I have enough energy to cook. I can eat one portion and freeze the other 3 and do extra rice to freeze too.

    One more question; could the saag aloo and rice be reheated from frozen do you think, or would I need to thaw them in the fridge?
    Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)

    I've never had a microwave, so I'd always had to thaw stuff first before reheating, but I'm sure I read of people reheating stuff in the microweave straight from frozen.

    Hi Hornet Girl, I did my houmous by lightly roasting my peppers in the oven and blizting it all up. I actually burnt quite alot of mine (lol) but it added a nice smokey flavour to it

    ETA: I also put some raw red peppers in too when I did another batch and that added a new fresh flavour to itxxxxx
