What's your 'can't be bothered' dinner/tea?

Can never be sure if OH will be home for dinner or not, sometimes I cook dinner and get phone call to say he is not home, tend to freeze whatever I have cooked, and then have my ....can't be axed to cook etc meal.......cheese sarnie, sometimes toasted, sometimes not, but whatever it has to have loads of cheese lol there is something sooooo nice about a cheese sarnie lol....whoever said laughter was the best medicine has clearly never tasted wine

I guess another concern for me is that with my busy period being 8 weeks, the easy meals still have to contain about 4 portions of fruit/veg. This is since I rarely get a chance to eat much more than a banana at lunch, and tend to avoid snacking.... so counting my brekkie raisins or smoothie with the porridge, dinner needs to still be pretty healthy.
Some of these suggestions certainly do tick all the boxes though for that, so going to make a nice list. Thanks all!Softstuff- Officially better than 0070 -
Pasta with broccoli: boil pasta and broccoli together, meanwhile fry garlic or onion (also chilli if my DS is not eating with us), drain pasta/broccoli mix, dress with fried garlic or onion and oil, grate cheese on top, dinner served!
My DH: beans on toast (which he does when I am not here as baked beans are not my favourite).
The kids: pasta with tomato sauce (quick tomato sauce: fry garlic or onion in olive oil, add tinned tomatoes, top pasta with this, grated cheese on top).
Hippy Slop: any frozen leftover soups/rice/veg, all mixed in one pan, quickly pressure cooked, nobody knows what the ingredients are but almost invariably tastes great - occasionally it is a disaster, in which case:

Assuming you still have time to shop, can't you buy more fruit and veg to snack onApple, pear, satsuma, tomato, melon, grapes, plum, peach?
What about tinned, too - sweetcorn (yes, I eat this cold from the tin) pineapple, peach, fruit cocktail.

My failsafe is pasta and a sauce from the freezer, or baked potatoes if I know in advanced that I can't be bothered lol! Sausage and chips. Freezer meals. Actually thinking about it I have quite a few failsafe meals, the others all involved stuff on toast. Savoury Tuna on Toast
Toast one side of a slice of bread under the grill.
Pile tuna mixed with mayo onto the untoasted side of the slice of bread, top with a few thin slices of tomato and onion, a sprinkle of pepper and grated cheddar cheese.
Pop under the grill until the cheese is golden and bubbling.
Actually, make that TWO slices of toast!

Boil in the bag rice with boil in the bag fish in sauce and a few frozen peas/sweetcorn all cooked in the same saucepan . Lovely late at night after late shift!

Veggie hot dogs in HM bread rolls with a smear of mayo. Mr LW has a slice of cheese in his as well, as he has a bigger appetite than me. Tomato and a couple of pickled shallots on the side.If your dog thinks you're the best, don't seek a second opinion.;)0
