    :)A bag of mixed frozen veg,couple of veg or chicken stock cubes makes a good soup-very cheap-and can be partially blended to make thicker and leave some texture. You can also add any leftover veg or bits of uncooked veg in the fridge, leftover potatoes either cooked whole or mashed or even any chickenor meat leftover from other meals. Serve with bread and cheese and you have a healthy,filling and cheap family meal.

    Bangers 'n mash plus veg on the side is an easy meal we often eat - grill some sausages, use frozen mash which is perfectly adequate, nice with a dollop of mayo in it. It is not as cheap as value potatoes but not expensive in the grand scheme of things, and add veg of choice -fresh or frozen - cooked in microwave. Also works with chops, simply add appropriate sauce of your choice.

    Found a great chicken breast recipe the other day, really easy and tasty. Place chicken on foil, spread with mix of pesto and mayo (twice as much pesto as mayo), add halved cherry tomatoes / thick sliced normal tomatoes. You can add veg of your choice such as asparagus or frozen peas etc. Make into a parcel and cook in a hot oven for about half an hour. Serve with starch of choice such as rice, potato, chips, or cous cous (very easy to cook, just add boiling water and cover!) plus veg on the side, again cooked in micro to make it quick and easy.

    Liver or kidneys with a couple of veg - takes about 10 minutes, very healthy, very simple and very cheap.

    I've made this minus the salad (served with something else.) £1 a chicken breast which is lovely (used the rest of the Parmesan for lots of other things too like pasta)

    i often make nuggets like this and do them in the oven, and i always do chips or wedges this way , i dont have a deep fat fryer- much healthier than the take away versions

    Following on from previous message about chips...

    If you cut the potatoes into the right shape, put a small amount of oil (we use sunflower) in a large sandwich bag, add the potatoes and shake lots, it coats the spuds with oil really well and you don't have to use as much. You can always prepare them first thing and leave them in the fridge in the bag 'til supper then tip them onto a tray for roasting.

    Hi Smithsonian,

    Home made Tagliatelle. It's really easy to make, has 5 ingredients (tagliatelle, onion, smoked ham,cheese and a stock cube) and is healthy enough depending on how much cheese you use. :)

    Potato and watercress soup

    Just onions,potatoes, bag of watercress and stock cubes easy and very tasty.

    I usually make pasta for a quick meal with whatever is in the fridge with either a creamy based or a tomato sauce with salad and garlic bread.
