    Mine is porridge with some honey and cinnamon (but going off that now,I've had too many times),muesli-type cereal with banana or a banana sandwich with Marmite/honey and peanut butter.:D

    elbow macaroni with Cardini's Caesar dressing (has to be Cardini's, there are some very nasty ones out there) & lots of black pepper, crusty bread too if there's any

    egg noodles with Hoisin sauce, soy sauce & Chinese sesame oil, bit of chilli oil/sauce too if you like

    proper oatmeal porridge made with water & salt & served with cold milk

    Hi there

    I am looking for inspiration for quick and healthy meals after long working days. Me and the OH are working 12 hour + days at the moment, and need ideas of things that take little effort with maximum taste (and hopefully not too much cost :). Things I enjoy making are things like spagetti carbonara, jacket potatoes, salad etc.

    I do have a slow cooker which I have used before, but in my current situation would have to get up at 3am to start chopping ingredients so that is never going to happen..

    Any help would be greatly appreciated

    I m a lover of stir frys myself... you can buy the pre chopped veg and add prawns or chicken breast, quick soak noodles and your there with soy ginger etc or you could cheat more and add a stir fry sauce. Filling and healthy

    Or instead of creamy carbonara try basil tomato and veg

    I know its practically not homemade but dolmio sauce and a packet of mince takes 15 mins to knock up bolognese, can then have fora couple of days with spaghetti, jacket potatoes, in wraps etc

    I'm veggie so often make huge bowl of chunky lentil/veg soup and have it as soup or even with pasta

    Jacket potato and filling,takes under 30 mins in the microwave.
    Quorn is fast,cheap and easy to cook ,sausages mince etc under 30 mins

    Cous cous is so simple (just add hot water),this can form the base of a filling salad when you add vegetables,cheese,meats etc

    for me you can't go wrong with the BBC Good Food website - you can search on cooking time and low fat or even calories per serving. I also find the reviews very helpful for judging if a dish is going to be tasty.

    Could you not chop up your ingredients on your day off if you have one or say whilst you are waiting for the kettle to boil and just leave everything in the fridge overnight. I always do this so I don't feel I am wasting time in the morning.

    Cook and drain your pasta then empty the contents of a tin of mackerel in tomato sauce into the same pan. A sprinkle of cheese and that is a very quick supper. Don't forget you can cook your vegetables in with your pasta, just calculate the timings. When you drain your pasta & veg together you can then quickly saute some onion/garlic in the same pan, add some chopped smoked streaky or chorizo, put the pasta & veg back in and add some semi soft cheese. That's quite luxurious actually.

    And things don't get much quicker than an omlette.
