What's your 'can't be bothered' dinner/tea?

Hi Zara,
We usually have a quick/easy/cheap tea one night a week just as you are thinking with either egg or beans or something on toast or soup with bread. Nice to have a night off cooking as these type of meals are so quick to make. I don't see that it does any harm, so long as we're filled up and the rest of the week/month has a good balanced diet.

We have a left over night once a week - and if there are no leftovers, then we have a treat and I make Pizza. At least thats the plan - sometimes I order takeout! I find it difficult to plan the meals using leftovers as when I do that you can guarantee that the children will find it delicious, or my OH will be starving. We have packed lunches so I do use the leftovers for that, but the children adore egg & chips or cold meat & chips. And if I really can't be bothered then it is beans on toast for the kids and takeaway for us!!!Me, OH, grown DS, (other DS left home) and Mum (coming up 80!). Considering foster parenting. Hints and tips on saving £ always well received. Xx

But yes, we do have nights where we don't have something I would normally make. Last night we had beans on toast, and we'll usually have tinned soup at least once a fortnight.

Pasta all the way!
Either with easy cheesy sauce - tablespoon flour, oil, large glug of milk, teaspoon of mustard & lots of cheese. I pop sunflower seeds on the top for crunch.
Or - easy tomato sauce (learnt in Italy), squeezy garlic, mixed herbs (or basil/oregano), tomato puree, cheese and a little oil. Scrummy.

Cooked pasta with 2 tablespoons of pesto stirred through (readymade if I dont have any of my own), a dollop of butter, a couple of tomatoes chopped-up and some grated cheese over the top (Parmesan if I have it).
Served with salad - if I have some.0 -
my 'cant be bothered' to cook supper for OH is to bung a part-baked baguette in the oven then grill some bacon. open baguette while still hot and put the bacon in then put on a couple of those processed cheese slices (I call them mcDs cheese). alternatively - I put in some tomato slices and a bit of lettuce for a BLT!0

It's an invention of OHs late father, and a favourite with his whole family - tomato cheese.
Fry off an onion, add a tin of tomatoes, heat up, and add some grated cheese, and stir until nice and melty/ creamy. Serve on toast, serves 2, so multiply accordingly.
