Aww, I love quick stuff like beans and cheese on toast but hardly ever get to have it for tea as hubby doesn't think it's a meal if it doesn't have gravy on it  It would be nice to have one easy meal night a week I think.

a quick meal in our house (apart from the baby) is beans on toast or pasta and a jar of sauce

we have this once a week now

So your baby is your quick meal - doesn't cannabalism count as child abuse?

In 25 minutes this evening, I created oven cooked salmon (from frozen), steamed basmati rice and prawns (from frozen) in olive oil with garlic and chilli. Whilst still managing to check my email and start to surf the internet. Good food doesn't have to take ages or be complicated.

I'd also recommend the slow cooker approach, or my old favourite from my flat share days of "meal of the weak", I'd make huge risotto, pasta bake, lasagne or similar and then eat it for the next four or more days, often taking the same thing to work for lunch as well!
