Am coming up to the busiest period of my year work-wise, in November and December I wind up working stupid extra hours, and twice as hard during the time I'm there. Unfortunately for no extra money.
So - looking for ideas of how to get through this food-wise. I only have a small freezer, so that'll be full of easy to reheat homemade food.... but we're talking about 1-2 weeks worth that'll fit in there.
Has anyone any clue of what I can do otherwise? I'm so tired often I can't even be bothered to fry a sausage or do an "on toast", but realise that might be the only answer. Can't leave it to hubby, since he works 2 jobs!Softstuff- Officially better than 0070 -

Erm, you could make a big batch of mince in tomato+onion sauce. Adjust seasoning daily for spag bol (basil), chilli (chill, kidney beans) or curry (fried curry spices).0 -
fresh filled pasta (has quite a long use by date on it) Boil for a couple of mins and stir through a couple of spoons of pesto sauce.0

Do you have a slow cooker? Its very easy to just chuck everything in in the morning and have a lovely dinner waiting for you when you get home.:)Do more of what makes you happy:)0

if you know things are going to get hectic then nows the time to do some batch cooking and freeze it whilst you have a bit of time.proper prior planning prevents !!!!!! poor performance!Only when the last tree has died and the last river been poisoned and the last fish been caught will we realise we cannot eat moneyquote from an american indian.0

I work till half ten a couple of nights a week and have a few stand-bys. Mushroom noodles is really quick to make. Just fry off an onion, some mushrooms with some soy sauce. Stick some noodles in boiling water for two minutes, drain them then stir into the veggies. Would be even quicker with straight to wok noodles. You could also do noodles with a stri fry made from those stir fry veg packs from the supermarket.
Fresh filled pasta is a brilliant stand-by and if you're just cooking for you do the whole pack then you can have the rest the next night.
Fish finger sandwich is a good standby- have with some salad. A jacket potato can be done in the microwave in about 6 minutes and is always good served with beans or cottage cheese.

I also work in the evenings and don't get home until 10:45pm ish, like Got-it-spend-it. My trusted quick snack at that time normally involves eggs......this is my favourite snack...I cut a circle out of a piece of sliced bread and then fried the bit with the hole in it having then cracked an egg into said hole. When cooked enough I then put a slice of ham on top and try to turn without breaking the yolk, on the other side I put a slice of cheddar and cooked a little longer so the cheese just starts to melt. I then put the whole lot between two slices of bread, a bit like a club sandwich, with lashings of tomato ketchup. Although this all sounds a bit of a faff, it's a filling one pan meal, which I can just about manage to cook at that time of night. But not for every night or I'll end up the size of a house, or egg bound! But it is so yummy.0

I looked at the title and thought it was going to be a whinge about the new Nigella Lawson series...:rotfl:
It drives me mad when she spends the whole show saying "oh but i couldn't be bothered to do that" :mad: ...well why bother getting on the telly and cooking then....oh you can be bothered to do that can you... when you get paid to be bothered....
I still watch it though???? but then i enjoy ranting at the telly!
oh and just to keep this on topic... have you tried bulk cooking batches of meatballs and keeping them in the freezer, then all you need to do is wack them in a pan with a tin of toms with herbs and boil pasta....voila...yummy dinner..
i always have a bag of homecooked meatballs in the freezer for emergencies!0
