It's STILL tough and not getting better - so how are we coping?

    My corned beef hash recipe consists of mashed potatoes, onions, & mushrooms. Can't provide quantities as I do it by rule of thumb according to number of portions required.
    1. Boil potatoes & mash. (Cut them small so they cook more quickly & save fuel)
    2. Fry chopped onions & mushrooms until soft.
    3. Fork up the corned beef until flaked.
    4. Mix onions, mushrooms & corned beef into the potato mash mix.
    5. Transfer mix to a hot frying pan until surface is crispy brown on both sides.

    This mixture (before frying) can be flattened out or turned into rissole sizes and frozen in clingfilm.

    Re spag bol recipe - when frying the onions and garlic I add a slice of finely chopped bacon, smoked if possible. A dash of red wine is excellent in the sauce, as is a little sugar to balance the acidity of the tomatoes. I cook it slowly for an hour or two, then take the lid off and let it reduce and thicken. As it does so, I check for taste, adding extra salt/pepper/sugar/basil if needed. A lump of butter stirred in at the end finishes it off nicely.

    Someone asked for a chutney recipe - I made some apple, plum and fig chutney the other day, using windfall apples, a handful of plums and four figs from the bush in the garden. I chopped the fruit and cooked it till pulpy in about a quarter pint of white wine vinegar with a little chopped onion and garlic added. I then added ground ginger, ground mixed spice, about half a pound of brown sugar and another quarter pint of vinegar and simmered till it was thick (?about half an hour?) then put it into jars. It only made a couple of jars but that's enough for our house. It tasted nice when I tried it, and I think it would go well with strong cheese at that time of year that begins with C...

    Regards and good vibes to all who are going through tough times at present. I keep going by reminding myself that everything usually turns out ok in the end. And I certainly believe in that old saying "what goes around comes around..."

    Parboil a couple of large potatoes with the skin on, they should still be firmish inside. Peel off the skin and slice lengthways thickly. Put a slice of corned beef in between two slices of potato and dip in batter. fry gently till cooked and browned. Do this till you have as many as you need. Serve with salad or other veg.

    Morning!
    DS had corned beef pie at school once for lunch. He wasn't impressed... said it looked like Bagpuss!!!
    I'm feeling a lot better now, he was lovely yesterday, probably due to the mega early night he had on Sunday.
    I'm going to brave the rain - I don't know what it's like elsewhere, but South Wales is very, very wet today - but my library books are so overdue, the fine is going to be ginormous. Plus, the local university is having an open day in the lifelong learning section, and I had a flyer through saying that some courses are free for people on benefits, so I'm going to go and see if I can get some free education.
    I've spent most of this morning trying to clean my kitchen... DS wanted to do some 'cooking' last night, and there's now flour EVERYWHERE. He used just about evey pan in the cupboard, got stuff all over the floor and didn't even make anything edible, just a big pan of gloop (flour and water I think , with some spiced thrown in).
    Right, I'm going to find my raincoat and get moving, see you all later :wave:
