I always keep some chorizo in my fridge. Favourite recipes include:
- Homemade pizza (w/sundried tomatoes, red onion)
- Pasta, red pesto, chorizo, pine nuts, parmesan, chestnut mushrooms. Cook the pasta, set aside, fry pine nuts until they begin to colour, add quartered mushrooms, chorizo and fry a little longer, then add cooked pasta and stir in some pesto. Serve with some crumbled parmesan shavings.
- Cheddar, tomato and chorizo toasties
- Jambalaya. Loads of recipes out there. Pick one you like the sound of!0 -
I like to fry it up with the onuions and garlic at the start of a stew. Other good things to put in said stew: chicken or rabbit, tinned toms, white beans or yellow lentils, paprika.
Starter: Make tiny pancakes (mashed potato, egg, flour) or rosti and serve with slices of chorizo on top, cooked or not.0 -
fantastic in sarnies with a bit of cheese, like brie or camembert
also - great chopped into little chunks then fried a little (with veg if you like, onions, peppers) and mix in cooked pasta. The oil from the sausage leaks out and is a gorgeous pinky orange colour and colours and flavours the pasta brilliantly.

Well, I bought chorizo, planning to fry off and make some sort of pasta with green pesto and mozzarella....but this is a very vague recipe idea!
Plus it's a good sized sausage :rotfl:so what else can I use it on!?0 -
I made a sort of chorizo chicken casserole thing the other day and it was lovely. I got some chicken legs and thighs and tossed them in some seasoned flour, to which I added some smoked paprika. Then I fried it off, just to give it some colour.
Then I fried off some chorizo slices (I drained off some of the fat), and then added an onion, chopped into eighths, a crushed clove of garlic, a bit more smoked paprika and a red pepper, chopped up the same as the onion, and cooked it off until the veg was soft and a little 'toasted' on the edges. Then I added a tin of tomatoes and a bit of veg stock (not too much), put it in a casserole, put the chicken on top and baked it till the chicken was tender. It was lovely served with rice, and I'd imagine that you could do something similar with pork.
Delia also has a Spanish chicken recipe where the chorizo is baked with rice and chicken pieces. Or, it's lovely if you fry it till it's crispy and serve it with fried eggs, where you cut a hole in a slice of bread and fry the egg in that.0 -
I chuck it in a basic paella with prawns and chicken.

My mother's Moved to Spain as it's much cheaper to retire too so you can imagine I have quite a bit of chorizo around!:D :eek:
You can use it in stews with beans etc - very nice as it gives a nice paprica flavour and you don't have to use too much. Something they do in Spain which is delicious is fry some finely chopped chorizo with some chopped bacon for a few minutes until cooked and slightly frazzled. Add some broad beans (as young as you can get - I use frozen baby broad beans which I defrost for 10 mins in hot water) and cook for another couple of mins until heated up. Then serve with some crusty wholemeal bread the paprica juices are great to mop up.:drool: A nice light supper!
I could make it better myself at home. All I need is a small aubergine...

Also one of the sandwich shops does a really nice sandwich which is just a fresh baguette with rocket and chorizo0 -
My favourite is slice it and put on HM pizza! And I found a recipe on this site using it in a chickpea stew, which is also fab. It has so many uses.... if you do a search you'll probably find many more. Another one: fry up some slices of chorizo with onion and strips of red and green pepper in a frying pan, add some tomatoes (fresh or tinned) and finally crack a few eggs into the mixture.
