She could try claiming it back from the employee, only if she can find the employee or their finances. It's the origin of the phrase giving someone a blank cheque.

She has their addresses but they do not have much cash, which makes me worry when she gives them a blank cheque.
No you're not a vegetarian if you eat any animal or fish, so do not insult genuine veggies by calling yourself one!

What are the cheques for? Staff wages? Seems very unprofessional. As a member of staff I would feel very uncomfortable about this. It's like putting people at risk of temptation just to test them. Yuk.

What if a staff member used it to purchase something unsavoury/dodgy and then blackmailed her with it?

Yes staff wages weekly, I don't understand why she does it but she says it is easier but I don't see how. They have worked for her for a few years and have their own houses. Another thing is that she has her bank statements sent monthly so it could be a while before she found out. She says the bank would ring her about it, but not necessarily.

How. She has signed the cheque and as long as it is paid to the person on the cheque what action can she take.

If employee x writes £20000 on the cheque and receives it, what can your mum do. The only evidence is the cheque, and the cheque says pay £20000 and has been signed by your Mum. Case over.

Other thing to consider is, how is the tax and NI paid for. What if the revenue run a check and find out that employee x was paid £20K but Tax and NI has only been paid on £2K. Looks dodgy, and would warrant an investigation. Mums excuse - employee wrote to large a cheque to themselves. Revenue response - Oh really, lets check your books for the last six years and identify what other tax has not been made.

Your Mum has got to stop this. If she won't can you get me a job, I could do with a large cheque.

She always says they wouldn't do it but if by some small chance they did she could get it back as she knows where they live. I don't think it is that straight forward.

So what if one day, they write £10000 and leave the country with the money?
    Best Regards

Well that is possible, one of them does have a mortgage though so couldn't just leave.

How does your mum know which cheque is given to which employee? I bet she doesn't.

A mortgage is even more of a reason to leave. Nice big cheque and walk away from the mortgage.

Banks don't routinely check all cheques. They might only check it if she went overdrawn.

I think she writes it on the cheque stub

They are usually paid around £200 per week, so if all the sudden they wrote themselves cheques to the value of £10,000 wouldn't the bank notice?

The way my mum see's it is that the house would keep that particular employee here and she always says she would phone the police and take them to court. Not sure quite how that would work as she signed the cheque, but isn't it still stealing if they write a lot higher than it should be? Does seem that way to me.

Does your mum even check her bank account?

Assuming she bothers to date the cheques, they would be valid for 6 months. She is giving staff members cheques each week. There could potentially be many of blank cheques floating about. If she employed a student, say, who lived at home and didn't 'need' the money, would she be able to honour all the cheques in one go (happened to me!)

What if she mislaid the rest of the cheque book and had to cancel the remaining cheques? How is she going to know what on earth is going on?

I really hope she's not as dappy as she sounds, otherwise she is putting all her employees at risk. (I am far from perfect myself, I will add at this point - learnt many things the hard way!)
