The tenancy agreement has unfortunately expired and was not renewed. From my (recent) research, i think this unfortunately means that the deposit is no longer protected. Don't think we had an inventory, as it was all done privately and quickly! Won't be doing that again!0

No, you're wrong. The good news is that when your tenancy's fixed term expired, the tenancy itself continued on a periodic (monthly) basis. All terms/conditions unchanged, including the legal obligation on the landlord for the deposit to be protected.
If you have any doubts, contact each of the 3 schemes here and ask if your deposit is protected. If not, chase the LL or come back here.0 -
Can you not take some of the paving slabs from her garden to use in the new house you are renting (or sell them on)? I'm sure you would get some of your money back.
I don't see a problem in returning her garden to the condition it was in before. That's exactly what you are required to do as a tenant (only its normally making good damages etc, not returning a renovated garden to its previously unrenovated state).
She sounds horrid. I really hope you do take up some of the suggestions (within reason), just because she has acted in such a sly and indecent way.
Just to add - if there was no inventory, then there is no proof of the condition of the garden when you moved in. So if you were to return it to its original state, the onus would be on her to prove that it wasn't in that state when you moved in.0 -
I'd be very tempted to get some bulbs for something that's not going to come up for a while and plant out some rude words in the beds. As well as returning the garden to how it was when you moved in.
Learn the lesson here - never, ever spend money on someone else's property.0
