I've never made these (although they sound good, so they're on the list!), but I'm guessing that whatever it is that binds them together (possibly the sugar in the honey?) isn't doing its thing. If its the sugar, then maybe your oven was too cool or you didn't bake them for long enough, or maybe the ratio of honey wasn't great enough. Dunno - just guessing!

i have one from good food mag and it says for the best flavour use an unsweetened muesli thats not too fruit filled and although it says to use pecan nuts i suppose walnuts would do too.

    Muesli fruit and nut bars

    100g butter
    100g light muscovado sugar
    4tbsps golden syrup
    100g pecan nuts
350g unsweetened muesli ( they used organic)
    1 medium ripe banana, mashed

    heat oven to 180c, 160fan, gas4
grease and line 18x28cm tin, melt butter, sugar and syrup on low heat, chop half the nuts, put in the pan with the muesli and banana and stir till well covered, spoon into tin and press down with the back of a spoon till firmly packed, scatter whole nuts over the top, press lightly in. bake 20-25mins until dark golden, leave in tin till cold, loosen edges with a knife cut into 12 slices. keeps in tin 5days

maybe the secret is to pack the mix well into the tin so that it doesnt come out crumbly

I've found that the best way to make them stick together is to put all the mix in the tin and then get a piece of cling film, put this over the top and really squash down using the palms of both hands. This packs the mix in really tight and does seem to work well.

yum, I might try tomorrow too!

Personally, I'd try more honey or whatever gooey stuff was in.

Does anyone have a tried and tested recipe for a low(er) fat muesli bar? Is there such a thing? I could try adapting a flapjack recipe, but there does seem to be an awful lot of fat/sugar.

    Suggestions welcomed!

    Hi Sandieb

I popped home during lunchtime and caught a short bit of a programme on ITV (I think). They were making muesli breakfast bars.

From memory, they mixed their own homemade muesli (oats, dried fruit and berries and nuts and seeds) in a blender with some orange juice and a drizzle of honey to make a thick consitency, then spread on a baking tray as per flapjacks and put in the fridge to chill until hard.

The way they explained it was that you could add anything you liked, and it was a 'breakfast on the go' type thing. Hope this helps, I'm sure someone else will come up with something much more precise, but at least it's a start!

I saw that too - and it looked lush. Caught my eye because I love granola bars, but they are sooo high in fat/sugar. Hope you get some more ideas!
