Honey & Peanut Butter Booster Bars
Ingredients
• * 125g unsalted butter
• * 150g soft brown sugar or light muscovado sugar
• * 125g no-sugar-added crunchy peanut butter
• * 75g honey, plus a little more to finish
• * Finely grated zest of 1 orange
• * Finely grated zest of 1 lemon
• * 200g porridge oats (not jumbo)
• * 150g dried fruit, such as raisins, sultanas and chopped apricots, prunes or dates, either singly or in combination
• * 150g mixed seeds, such as pumpkin, sunflower, poppy, linseed and sesame
Directions
1.!Grease and line a baking tin, about 20cm square. Put the butter, sugar, peanut butter, honey and grated citrus zests in a deep saucepan over a very low heat. Leave until melted, stirring from time to time.
2.!Stir the oats, dried fruit and three-quarters of the seeds into the melted butter mixture until thoroughly combined. Spread the mixture out evenly in the baking tin, smoothing the top as you go.
3.!Scatter the remaining seeds over the surface and trickle with a little more honey. Place in an oven preheated to 160°C/Gas Mark 3 and bake for about 30 minutes, until golden in the centre and golden brown at the edges.
4.!Leave to cool completely in the tin (be patient - it cuts much better when cold), then turn out and cut into squares with a sharp knife. These bars will keep for 5-7 days in an airtight tin.
Variation: Banana Booster Bars:
Replace the peanut butter with 1 medium ripe banana (about 175g), mashed. Stir it in after all the other ingredients have been combined

Somewhere on jere is a lovely recipe for low fat cereal bars made with dried apricots, seeds, oats, etc. (I couldnt find it though!!:o).
I found it wouldnt stay together when I made it with dried fruit though so I soaked a bag of dried dates overnight in pineapple juice then blitzed in the food processor. It makes a really nice fudgey tasting bar that might appeal to kids too.
You could always add choc chips and they can be eaten stright from the freezer coz they dont freeze solid.:)0 -
Hi,
I'm currently trying to lose a bit of weight and rather than eating my usual shop bought breakfast bar I'd like to try to make my own.
Does anyone have a recipe for a low cal (ish) satisfying cereal/oat bar? I eat all fruit except apricots (bleurggh!) and will be having to buy all ingredients to start from scratch so can have a go at most things.
Obviously the cheaper the better!

Cereal bars tend to be quite high sugar and dense, they're usually held together by something very sugary like syrup or honey. You could try making a protein bar with nuts and fruit added to it. Wouldn't be as crunchy and generally they're set in the fridge but higher protein, less sugar. Plain or flavoured protein powder is mixed with water and sweetener, rice crispies, branflakes, nuts etc mixed in and left to set in the fridge.Living cheap in central London :rotfl:0

I tend to make these whenever we need a healthy snack or tummy-filler on the go. The ingredients aren't the cheapest, but they make 16 odd and keep very very well. I tend to switch out the cranberries and peanuts for mixed dried fruit, a few choc chips and chopped mixed nuts.

Whilst those look about as healthy as a bowl of crunchy nut (ie not very but not as bad as ice cream and pizza!) they do sound rather nice, my OH would definitely like them so i will have to give them a go
I need to stop rambling here and get looking for good cereal/snack bar recipes! A light bulb just went off in my head as OH needs snacks and I need emergency breakfasts on the go for when I start leaving the house at 6am!Living cheap in central London :rotfl:0 -
