The buttermilk is acidicIt can be subbed for yogurt, which is also acidic. In soda bread the buttermilk reacts with the bicarbonate of soda (which gives soda bread its name) which is alkaline.
As this has fallen from the front page of OS, I'll add it to the soda bread thread.

anyone got a good recipe for soda bread,i got wholemeal flour and buttermilk 250 gramms,im not sure if thats enough but it was really exspensive so i didnt want to buy two?0

Look at the first post on page 4 for pics.
Use Angeltreats' recipe in post #81 on this site rather than a lot you will find online. I experimented with different recipes but this gives the most authentic wheaten soda.
Oh, BTW, last time I made it, I put a tin of water in the bottom of the oven and it was the softest crust I've ever had on a wheaten. Yum!

Soda bread is basically irish bread where the rising agent is bicarbonate of soda.
However, sometimes people mean "soda farls" when they mention soda bread.
The ingredients of soda bread and soda farls are similar if not identical, but soda bread is cooked in an oven and soda farls are cooked on a flat surface just in the same way as you fry something in a frying pan but instead of using oil to prevent sticking you use flour. Thus it is a completely dry method of cooking.
The soda farl is perhaps the most popular type of soda bread. It has a very distiinct appearance looking like a thick pancake only white inside.
Note it is not to everybody's taste as the bicorbonate of soda is very distinct and it can taste bitter to those not used to it.
The soda farl consists of flour, bicarbonate of soda, cream of tartar and buttermilk with a little salt. Its as simple as that.
Since it is basically meant to be a staple bread and not a speciality bread, i would try to resist attempts to add other ingredients to make it look like some sort of speciality continental bread. It impresses nobody in my view.0
