Jam making help for first timer

Just realised I never came back - the jam did set in the end - not solid, but not sloshy either, lol.
Just bought a load more Strawbs this morning - well, they were reduced and it seemed a shame to leave them behind - so I'm jamming again once I've soaked the labels off the jars.
I also have a load of pears to use - anyone have a nice recipe (I have an apple jam one, but I've not even tried it with apples yet so a little wary of playing around with changing ingredients)

I made some blackberry jam last year - a Deliah recipe I think but it set really hard. Almost too hard to spread :mad:
So has anyone got a good ratio of water to fruit they could give me so this year I can actually spread it.
Also, to the person asking about the wax lids. I dont go to that expense, I simply cut appropriate size rings out of cereal box inners... thats wax paper!

hi
i make jam quite often and have never used wax discs or anything else like that. i use empty jars with screw caps - pasta sauce jars etc, anything.
scald them out with boiling water then put upside down on a clean cloth just before you need to pot up.
pot up jam while still very hot then screw lids on (asbestos fingers required for this bit) once cool the pop up button in the lid will have gone down and they keep for ages.
still got some rhubarb and ginger from 2004 in an old curry sauce jar. not a speck of mould in sight
just made some elderberry jam - yummy

I think the Apple and Cinnamon recipe came from here, so my thanks to the original poster if they are reading. The recipe is -
* 7 cups Apples (Peeled & Cored)
* 6 cups Sugar
* 1/4 cup Lemon Juice
* 1 tsp Cinnamon
Slice up the apples finely and place in a large saucepan over a high heat.
Add the sugar, lemon juice and cinnamon while stirring continuously.
Let the mixture boil for about half an hour until thickened, removing any scum that may rise to the surface.
Pour the mixture into jam jars, seal and store away.
I'd be interested in the Rhubarb and Ginger recipe - bought some from a market the other week and it's lovely, so wouldn't mind having a go myself.DFW Nerd no. 884 - Proud to [strike]be dealing with[/strike] have dealt with my debts0 -
Hi,
When I made strawberry jam I used to add rhubarb. Rhubarb helps it to set and you can't taste the rhubarb as the strawberries have such a strong flavour. It also makes the jam a lot cheaper especially if you've got some growing in the garden.;)

Sorry - haven't tried it myself yet, so I'm as in the dark as you.
I know my 1kilo (3 large punnets) strawberry recipe the other week made 4 average jars (Gales Lemon Curd type) - so I'd imagine it would be less than that.DFW Nerd no. 884 - Proud to [strike]be dealing with[/strike] have dealt with my debts0
