Jam making help for first timer

Well I've just made some raspberry jam and hoping it's turned out ok :rolleyes: For future reference, how would I get rid of the pips? DH and DS wont eat unless it's seedless :mad:

Hi Naomi. If I had any raspberries I would follow a JELLY recipe instead of a JAM one. Basically the difference is a jam uses the whiole fruit, pulp, seeds and all whereas with a jelly you extract the juice - so you would boil up the rasps with water then strain the juice out through a jelly cloth then use 1lb sugar to each pint of juice and carry on as for jam.
Not sure how rasps are for pectin - you would need to check this. If they are lacking you would need jam sugar or certo.
This isn't a jam I've ever made - but I have made blackberry jelly. I boil them up with (windfall) apples then strain and carry on as above. The pectin comes from the apples.
BTW DH needs a strict talking to! If he's fussy about food like this DS will be too! NOOOOOOOOOOOOOOOOOOO! I've been meticulously saving bottles and jars to do jam and sloegin and even rosehip syrup - DH comes home from fishing and proudly tells me that "Oh by the way I dropped all those glass bottles and stuff off at the bottle bank on the way out - there were so many of them!"...

BTW I've not yet spotted rosehips... or any ripe blackberries here in the Bicester area... I'm hoping I might just not have been looking hard enough
Bit early for sloes though ain't it??? You're not supposed to pick them till the first frost so if they're ripe now I've missed half a season!!!!

I made some a few weeks ago from some raspberries given by a friend, I was surprised how easy it actually was although a bit tedious.
I used a recipe from the lakeland preserves book which had you simmering the raspberries for a while first, then the raspberries were put through an ordinary kitchen sieve. The trick i think is to keep pushing as much pulp as possible so not to waste it. All the seeds remain behind. The pulp and juice then go back in the pan with the sugar and continue as before.
My dd won't touch any food with bits in (never understood that because we all prefer to find bits of fruit and seeds etec) and she loves it.
My first attempt and I was well chuffed!! :T :T :T

but there seems to be a fount of knowledge in this thread, does anyone have a recipe for tomato puree that could be kept either in jars (preferably) or in the freezer? TIA.

Anybody seen any sloes yet?
Does anybody make jam from them? - I suspect you COULD but wonder if it's worth it as the fruits are so small compared to the size of the stones.
Might 'do' some sloe gin though!
Sorry, haven't read to the end of the thread yet, so may have been pipped (ha ha :rotfl: ) to the answer, but I add sloes to 'hedgerow jam/jelly' recipes- you can make sloe jelly, but it's an eat-with-cheese-or-ham jelly, rather than one to spread on your toast.
I have just found a recipe for blackberry and sloe gin jam, which I'll be trying this year. (You add gin to blackberry and sloe jam, before anyone worries about wasting their precious sloe gin!!;) ) I can post the recipe if anyone's interested.

Hi,
I'm west of Bicester (south of Banbury) and there are exactly 3 ripe blackberries in my village, so I think we've just got to wait a bit longer!
It is very early for sloes, and the elderberries are only just beginning to turn too.
BTW, how's Bicester town centre? Have they started rebuilding it yet? I lived near Bicester for about 10 years, most recntly in Caversfield.

What are you wanting to use it with, pasta? or ???
Is it a tom ketchup type thing your wanting? or just bog standard sauce? Passatta?
Are you wanting it to be used like the puree you get in a tube?
