    Chicken liver pate.

    1 finely diced onion, 1 clove garlic, 100 grams sliced mushrooms, 45 grams butter, 455 grams chicken livers, 2 tbls double cream, 2 tbls brandy, 1 bay leaf, pinch dried thyme and marjoram, parsley, salt and pepper.

    Put the lot in to the food processor with the s blade and mix until smooth. Put the mixture in to a ceramic bowl inside the slow cooker and put water around it to an inch before the top. Set to low for 8 hours.

    i know what you mean about heavy stews. i do like a chicken tagine, with preserved lemons and olives, served with cous cous and a nice green salad, lovely.

    there are others on google that you can adapt to suit you depends how confident you are.

    preserved lemons are really easy to make yourself at home. they do need to sit for a month, and make sure they are completely covered in juice or they go mouldy. they do really make a difference to the recipe tho. beautiful flavour.

    I make cous cous as per the instructions then add either roasted veg or finely diced onion, pepper and carrot (raw) and stir them in. this would be lovely with dried apricots.

    there is also a very nice carrot salad with cumin and olive oil and garlic that is very easy to do. peel a carrot then carry on "slicing" it with the peeler so you have very thin strips. then i basically do this recipe, http://moroccanfood.about.com/od/saladsandsidedishes/r/carrot_salad_paprika_cumin.htm the important bits are the garlic, olive oil, cumin and lemon juice. Oh and my slices are so thin i don't boil them, just toss them in the hot flavoured oil to coat and heat through to take the edge off.

    the best bit is, make too much of the carrot salad and cous cous then they can be used for lunches and accompany other dinners.

    I really liked when i did these, don't half pack a punch with flavour. I was worried about putting them in dry but it worked really well. I took the skin off to make them healthier, might be why their had a great flavour. Oh and I didn't marinate over night, too lazy for that most of the time.

    Dry Crockpot Chicken!Drumsticks

    Ingredients:
    • 2 tsp. salt
    • 1 Tbsp. paprika
    • 2 tsp. chili powder
    • 1 tsp. onion powder
    • 1 tsp. thyme leaves
    • 1 tsp. white pepper
    • 1/2 tsp. garlic powder
    • 1/2 tsp. black pepper
    • 4 lbs. chicken drumsticks, skinned if desired
    • 1 chopped onion
    Preparation:
    In a small bowl, thoroughly combine salt and all the spices. Rinse drumsticks and pat dry with paper towel. Rub the spice mixture into the chicken, skin side and bone side, making sure it is evenly distributed and pressed down deep into the skin. Place in a resealable plastic bag, seal, place in a baking pan to catch any drips, and refrigerate overnight.
    Place the onions in the bottom of a 4 quart crockpot and top with the chicken and spices. Cook on LOW for 8-12 hours until very tender. Serves 8-10
