Slow Cooker Ideas for Summer

    I use mine all year round.

    Some of our favourite summer ones are

    Chicken liver pate.
    Avacado alioli
    Stuffed peppers
    Lemon Mustard Salmon steaks
    Let me know if you would like any of them typed up :)

  • I plan to use mine regardless. I have Bacon and Leek Suet Pudding on my List of To Do Recipes. I also will use to cook Beans and anything else needing a long slow cook.

    Beetroot,barely any water ,packed tightly in a single layer.So much nicer than boiled and if you haven't got the oven on a good alternative to roasted

    Lots of things to cook for summer menus - mind you the present weather has me making casseroles / suet dishes - lol

    Ham/gammon piece to use cold as salad meat / in sandwiches / chopped in pasta / stirfries
    Also game meats - ie - duck / pigeon breasts

    Vichysoisse soup / Gaspacho Andaluz (tomato soup) to serve chilled

    Fish soup / Caldillo de Pescado - somehow light enough for summer lunches

    Salmon gently simmered and allowed to cool in its liquid

    Stuffed peppers / tomatoes / marrow (courgettes) / onions

    Fruit compote /tipsy apricots creme caramel - served chilled

    Pates / terrines - various meats and/or vegetables

    Fruit soups - pears & guavas / apple & raspberries

    Lightly cooked berries - gooseberries / red.black currents etc - served chilled with pastry and cream

    Stuffed peppers
    6 peppers, 700 gms sausage, 1/2 cauli, 200 ml passata, handful of crumbed feta, 1 diced onion, pinch parsley, black olives, garlic clove crushed, pinch salt, pepper and mixed herbs.

    Cut the tops off the pepper and empty the seeds etc, skin and brown the sausage meat.
    Grate the raw cauli, I do this in a food processor, mix with the rest of the items except the cheese.
    Stuff the peppers and put in the slow cooker with 1cm of stock. Add cheese to the top.

    I really cannot tell you how nice this is. :)

    I'll post the other recipe in the morning if time, if not after work.

    pinkprincess how long do you cook the peppers for?

    I always struggle with SC recipes in summer, the best I do is pilaf or cooking beans to add to cold salads.

    Sorry adelight, I forgot to say :o 4 hours on low I do them for but as the size of peppers vary you may like to leave them an hour longer if bigger.
