  • I used some double cream on Sat that I had bought the previous week, use by date was a few days gone and I'd opened it last sunday. I used it in irish coffee, it was fine but starting to turn any later and it would have been a goner....

    Make butter! Just put the cream into a jar and shake it for a long time, get kids and partner/friends to help if necessary (or do it in a blender and save your energy!). Butter is often made with cream that is not as fresh as the cream we use for pouring (a dairy owner told me once it is ok if the cream is not 100% fresh). Provided it does not smell rancid it will be ok.
    Finally I'm an OAP and can travel free (in London at least!).
  • I use up old cream by making chocolate icing to use or freeze. Melt together equal amount of chocolate and cream in a bowl over hot water giving the occasional stir.

    I second this idea. You can also do it with an electric hand mixer - just keep whipping until it separates. A big solid mass will form and there will be some watery stuff left behind (buttermilk).
    I think you need to rinse out the butter for best results then add salt if desired.
    Last time I made butter in this way, it was delicious! Better than shop bought.

    Hi kirsty,

    If you have plans for using the cream just give it a sniff when you open it and if it smells and looks ok, then taste a tiny bit and if it tastes ok then use it.

    I second third that :)

    & you get some lovely buttermilk to bake with or drink, it's really light & refreshing, nothing like the thick cultured stuff you get in the supermarket

    If it is only very slightly starting to turn, it can often be rescued with a pinch or two of bicarbonate of soda mixed in well. It won't rescue cream or milk that is really sour though.

  • Wow loads of ideas thankyou, The cream seems fine,,so I am going to make butter wow who would have thought I would be saying that!! LOL wonder if hubby will eat it ? I shall let u know how it goes.
    I plan to use the buttermilk thats left to put in scotch pancakes for breakfast tomorrow :-)

    I guessed it would be absolutely fine. The sniff test is always the best. When I have leftover cream I always make&freeze dauphinois potatoes. Good luck with the butter!

    Thankyou so much to you all for suggesting i make it, I would never have done so otherwise!!!
    I chucked it in the food processor on the fastest setting and within 5 mins i had butter and enough buttermilk to make my pancakes,,I am shocked at the amount of butter I got.
    I added a pinch of salt and it tasted lovely, hubby will defo eat it,,I dont eat butter on bread etc but he does,,I do use it for baking though.
    I am absolutely thrilled at how easy and satisfying it is,cheers all.
