Here's the fresh cream, egg free cake I made for mine and hubbys 17th Wedding Anniversary...... filled with fresh cream, jam and strawberries.

If its too sweet maybe try adding some lemon zest or I really like cream cheese frosting instead of buttercream, I don't have the recipe to hand but if you google it I'm sure there will be loads.

The trouble with buttercream is it really does have to be double icing sugar to butter otherwise it is too buttery and not fluffy enough.

You could try adding salt to help cut the sweetness.
I favour a buttercream which is half trex and half butter, you dont always need as much icing sugar as a butter only buttercream.

  • And my land before time cake. I was going to do an island with a volcano and a river with a waterfall, but I ran out of time.

Gorgeous cakes, just took me ages to get to the end of the thread.

I'm setting up a cake decorating business so building up my portfolio at the moment. I'm so thrilled with what I've created this week I had to show it off somewhere! It's not finished yet, I have to make Dougal tomorrow and then of course the wedding cake for it to sit on.

    It's a work in progress...
