Thought I might share one of the recepies that I have been cooking lately its very easy to prepare and is also very cheap

    Ingredients

1 large onion (can substitute leek for onion)
    5-6 large mushrooms
    2 tablespoons of tomato paste
1 large can of tuna (425g) in spring water (brine makes the dish to salty)
    1 350ml pot of cream
Pasta enough to feed 4-5 (pre-cooked)

Chop onions (finely) and mushrooms (i like mine reasonably thickly sliced) and add to a large pan. Cook till onions are soft and mushrooms have slightly browned. Add the tin of tuna and warm through, once tuna is warm add the tomato paste and stir through. Once combined add the cream and reduce until you can pull a spoon through it and no liquid moves into the gap (salt and pepper to taste). Add pre-cooked pasta, warm and serve.

This has hardly any prep time and is a great filling meal on its own or with some nice steamed veggies.

    Hi mz, found your diary!

Well done on your first week of being smoke free, I know how hard it is as I smoked from 11 to 21 years old and quit when I met my non smoking OH.

It's great that your transferring the money you would have spent straight to your credit card so you can see your progress immediately.

Keep up the good work x

Thanks Woo the encouragement is much appriciated, yeah my OH is a smoker as well so its a little difficult but he is going to give quitting a go which I am surprised at but over the moon at the same time will make my quit so much easier if he can quit as well. Yeah its amazing to see how quickly the savings add up over $100 in the first week.

Hmm what to do today, in one word lots. Did a heap of cooking yesterday and its all now sitting either in the fridge or freezer ready for going back to work tommorow night. Will have enough meals to cover both me and OH till payday which is wednesday. So after spending a fair bit yesterday $100 on nicotine patches for me and OH, $28 at the butcher (mince, casserole steak and chicken drumsticks), and $14 at the supermarket (butter, mushrooms, cream, bread, tomato paste, tuna and a lemon and herb mix for the chicken drumsticks). So whats that in total $142 spent, not bad considering its enought to easily get us through till payday so the next 4 days should be NSD yay. Internet bill came on friday but that can wait till payday.

Hmm well didnt get all of my list done today but hey you get that, also finnished off the cooking from yesterday and popped it all in the freezer so now have lots of yummy meals to take to work. Had vege soup for dinner tonight that was left over in the freezer from last weeks batch cook. I cant believe how much this site has change the way I do things, hardley ever used to cook (consuming way to much takeaway) as i thought it was to hard and to time consuming but now i spend one almost whole day off work cooking up a storm and well then i have 3 other days off to enjoy and have meals for the nights i do work. Oh how i wish i had known this sooner (the OH is also liking it as he was the main cook of the house and can now have a bit of a break), also means that im losing a fair bit of weight which is an added bonus :).
