Hotel is trying to charge for Breakfast after we have checkout?

I agree with Mark Hewitt. Don't send that letter as it is.
Personally I would forget about all the "he said she said" and stick to the fact that your confirmation said breakfast was included in the price and that is what you had. Who is to say that the confirmation is wrong anyway? It could be the hotel staff that are getting confused (or even retrospectively regretting making the offer in the first place).
If you look at it like this, had you gone to a hotel having booked a 2 bedded room and then insisted on arrival that what you really wanted was a 4 bedded room for the same price, they would be pointing to your confirmation and saying that is what you ordered and that is what you get. They can't try and wriggle out of it just because the shoe is on the other foot.
Let them know in a letter by recorded delivery that any further withdrawal from your card would be unauthorised and would be reported as such. It may be worth speaking to your credit card company as well to inform them that this is your intention should the payment be made.
In my opinion they will probably see sense when met with resistance but keep your correspondence calm and polite and don't give them further ammunition.

So you paid for self catering, took breakfast despite knowing what you had paid for and then wonder why they want you to pay for it?
I certainly dont think you had any right to breakfast on the further days and it could arguably be counted as theft.0 -

Lets boil down the facts. Are these correct?
* The email confirmation said the booking included breakfast
* They were subsequently told that the booking should not have included breakfast, but on this occasion they would honour it.
* The guests ate breakfast and left paying the amount on the confirmation.
Now, the critical thing is, given they were told that the booking would be honoured, at any point were they informed by any hotel staff that breakfast for subsequent days would not be included?0 -

OK, in summary - straight from the horses mouth!
1) We booked the accommodation
2) The booking confirmation stated 'Breakfast included'.
3) We arrived for breakfast on the first morning. The hotel acknowledged this was a mistake on their part. They agreed to honour the booking, however if we were to book with them again, breakfast would not normally be included.
4) We explained the situation on the second day (to a different waitress) and were served breakfast without question.
5) On the third and final day the issue was again raised by the restaurant staff, but they finally agreed we could have breakfast.
6) We settled the outstanding accommodation bill after breakfast - and completed the customer survey accordingly!
7) A letter arrived two days after checkout, requesting payment for the breakfasts!0 -

Dear Mrs ********,
I would like to thank you for your quick reply to our customer comment form and are very glad to see a company director replying to us personally.
As you can see from the attached confirmation details we received from you, breakfast was included. Your confirmation email with breakfast also constitutes a contract between yourself and us.
We are informing you now that we do not give you authorisation to debit any amount from our credit card. In addition, I should point out you are not entitled to debt our account after checkout.
We shall consider this matter closed unless we here from you in 7 days of receipt of this letter.
