Becky2, I always freeze chillis and chop them into meals straight from frozen.
You can do this with ginger as well but it has to defrost a bit before it is safe to chop without you losing a finger.
I have also frozen herbs in the past. Parsley works ok but basil needs chopping finely first.:)
Grating ginger from frozen saves the "losing a finger" scenario, just peel before you freeze. HTH0 -

I also do this,but peel it and cut it into small chunks before freezing.It's easy to chop finely with one of those two handled knives.
I also freeze leftover lemon zest and lemon juice.
I must start freezing chopped chillies.Great idea.0 -
I watched gordon's f word aaaages ago and a chinese restaurant owner said there's no need to peel ginger. Just wash n chop.0

I freezer ginger and then just grate from frozen. The skin ends up staying on the grater so no need to peel.

I freeze ginger unpeeled and grate from frozen. If you prefer to peel it, do it with a teaspoon whilst it is still solid.
I also freeze corriander and chillis too as well as garlic - but asda do blocks for about £1 for 20.0 -
